Coconut Lime Fish Soup

Ingredients:
- 500 g fresh white fish (like cod or tilapia)
- 400 ml coconut milk
- Juice and zest of 2 limes
- 3 cloves of garlic, finely chopped
- 2 cm piece of ginger, grated

Directions:
1. Cut the fish into bite-sized pieces and set aside.
2. In a large pot, heat a bit of oil over medium heat. Add the chopped garlic and grated ginger, sautéing until fragrant.
3. Pour in the coconut milk and bring to a gentle simmer.
4. Add the lime juice and zest to the pot, stirring well to combine.
5. Carefully add the fish pieces and cook for about 5-7 minutes, or until the fish is cooked through and flakes easily.
6. Taste the soup and adjust the seasoning if necessary. You can add salt or more lime juice as desired.
7. Serve the soup hot, garnished with extra lime zest or fresh herbs if you like.

Mushroom Ramen soup
Ingredients:
* 8 ounces ramen
* 1 tablespoon coconut oil
* 3 cloves garlic, minced
* 2 teaspoons ginger, minced
* 1/4 cup dried porcini mushrooms
* 2 shallots, sliced
* 1 cup Bella mushrooms, sliced
* 1 baby bok choy, chopped
* 1/2 cup water chestnuts, sliced
* 1/4 cup white miso paste
* 2 tablespoons tamari sauce
* 2 teaspoons hot chili oil
* 5 cups vegetable broth
Instructions:
1. Soak the dried porcini mushrooms in warm water for about 10 minutes until soft. Drain and chop them into small pieces. Reserve the soaking liquid for the broth.
2. Cook the ramen according to package instructions. Drain and set aside.
3. Heat coconut oil in a Dutch oven over medium heat. Add the minced garlic, dried porcini mushrooms, and minced ginger. Stir and sauté for 3 minutes.
4. Add the white miso paste, tamari sauce, chili oil, and vegetable broth to the pot. Mix well and cook for 15 minutes.
5. Lower the heat and cut the bottom off the bok choy, separating the layers. Add the bok choy, water chestnuts, fresh Bella mushrooms, and shallots to the pot. Stir and let simmer for 5 minutes.
6. Divide the cooked ramen noodles between bowls and pour the hot miso broth with mushrooms and vegetables over the noodles.
7. Garnish with green onions and sesame seeds if desired

Comforting Slow Cooker Chicken Pot
Ingredients:

4 chicken thighs, boneless and skinless
4 cups chicken broth
2 carrots, sliced
2 potatoes, diced
1 onion, chopped
3 cloves garlic, minced
1 tsp dried thyme
Salt and pepper to taste
Directions:

Place all ingredients in a slow cooker.
Stir to combine and season with salt and pepper.
Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
Shred the chicken in the pot and stir before serving.❤️❤️

New Orleans Shrimp and Corn Bisque
½ pound turkey bacon, chopped 🥓
1 onion, finely chopped (1 cup) 🧅
½ bell pepper, any color, finely chopped (½ cup) 🌶️
2 stalks celery, finely chopped (½ cup) 🌿
4 cloves garlic, minced 🧄
8 tablespoons butter (1 stick, or ½ cup) 🧈
½ cup flour 🌾
4 cups chicken, vegetable, or seafood stock 🍲
1 ½ cups water 💧
2–4 green onions, finely chopped (½ cup) 🌿
1 bunch fresh parsley, finely chopped (¼ cup) 🌿
1 ½ pounds medium raw shrimp (41/50 or similar size), peeled and deveined 🍤
1 tablespoon cajun seasoning (or to taste) 🌶️
4 ears of corn (2–3 cups of kernels) 🌽
2 cups heavy cream, warmed 🥛
Salt, black pepper, or cajun seasoning to taste 🧂

Instructions
1️⃣ Prep: Finely chop the onion, bell pepper, celery, green onions, and parsley. Mince the garlic. Remove the corn kernels from the cob. Chop the turkey bacon into small pieces. Peel and devein the shrimp, pat them dry, and season evenly with cajun seasoning. Set aside in the refrigerator until ready to use. Measure out other

ingredients. 🔪

2️⃣ Crisp: Heat a large dutch oven over medium heat and add the chopped turkey bacon. Cook for about 8 minutes until the bacon is starting to crisp, stirring occasionally. Drain all but about 1 tablespoon of bacon grease. 🥓

3️⃣ Sauté: Turn the heat to medium-low and add in the onion, bell pepper, and celery. Sauté for about 5 minutes with the turkey bacon until the vegetables are softening. Add in the garlic and cook for about 1 minute while stirring. 🍲

4️⃣ Roux: Add the butter to the pot to melt. Once melted, sprinkle flour over the bacon and vegetable mixture. Cook for about 5 minutes, while stirring and scraping up the bottom, until the flour has slightly darkened. It will look thick and clumpy. 🍞

5️⃣ Simmer: Slowly whisk in the stock, a little at a time, until incorporated and there are no lumps of flour. Add an additional 1 ½ cups of water and mix in. Add half of the parsley and half of the green onions. Bring up to a boil, then reduce heat to a low simmer. Cook uncovered for 20 minutes. Skim off any fat or foam that rises to the top. Stir occasionally to make sure it doesn’t stick. ⏲️

6️⃣ Cook: Add in the seasoned raw shrimp, corn, and heavy cream. Add in the remaining parsley and green onions, or reserve for garnishing each serving. Bring back up to a simmer, then cook for 5 minutes until the shrimp are cooked through and pink. 🍤🌽

7️⃣ Finish: Taste and adjust seasoning, adding more salt, pepper, or cajun seasoning as needed. 🧂

8️⃣ Serve: Serve hot, with an option to garnish with more parsley and/or green onions. 🍲🌿

Ingredients
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, peeled and diced
2 celery stalks, diced
1 zucchini, diced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon Italian seasoning
4 cups chicken broth
1 can (14.5 oz) diced tomatoes, undrained
1 cup small pasta (such as orzo or ditalini)
16 pre-cooked meatballs (beef or turkey)
2 cups spinach leaves
Parmesan cheese, for garnish
Instructions
Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened, about 3 minutes.
Add carrots, celery, and zucchini to the pot. Season with salt, pepper, and Italian seasoning. Cook until vegetables are slightly tender, about 5 minutes.
Pour in chicken broth and diced tomatoes with their juice. Bring to a boil.
Stir in the pasta and meatballs. Reduce heat to a simmer and cook until pasta is tender, about 10 minutes.
Add spinach leaves and cook until wilted, about 2 minutes.

Vegetable Minestrone Soup
Ingredients

1 yellow onion diced
4 cloves of garlic minced
1 carrot thinly sliced
2 stalks celery thinly sliced
2 cups mushrooms sliced
1 tbsp plant based butter optional
1 tbsp Italian seasoning
½ tsp crushed red peppers
2 tbsp nutritional yeast
28 oz petite diced tomatoes with juices
4-6 cups vegetable broth or water depending on desired thickness
15 oz red kidney beans drained
15 oz cannellini beans drained
4 oz gluten free elbow noodles cooked
Salt and pepper to taste
3 cups baby spinach chopped
½ cup parsley finely chopped
Instructions

Heat a large dutch oven or soup pot over medium heat and add a splash of water to coat. Add in the onion, garlic, carrot, celery and mushrooms and saute for 5-7 minutes until tender and mushrooms have released their juices, deglazing with a splash of water or broth as needed. Optional to add 1 tbsp vegan butter during cooking to add depth and richness.
Add in the Italian seasoning, crushed red pepper, and nutritional yeast. Stir to combine. Pour in the tomatoes, broth, and beans and bring to a gentle boil. Reduce heat to a simmer, cover and cook for 10 minutes. Add the cooked noodles, chopped spinach, and parsley. Stir and heat through until spinach has wilted. Season with salt and pepper, if needed.
Serve hot or store in the fridge for up to 5 days, or in the freezer for up to 3 months.

Creamy Beef Taco Soup😋
Ingredients
1 tablespoon olive oil
1 pound ground beef
1 large onion, chopped
2 cloves garlic, minced
1 packet (1 oz) taco seasoning mix
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (14.5 oz) diced tomatoes with green chilies
4 cups beef broth
1 cup heavy cream
1 cup shredded cheddar cheese
1 cup sour cream
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Tortilla chips, avocado slices, shredded cheese, and lime wedges (for serving)
Instructions
1. Cook the Beef:
In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.

2. Sauté the Onion and Garlic:
Add the chopped onion to the pot and cook until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.

3. Add Seasoning and Vegetables:
Stir in the taco seasoning mix until the beef and onions are well coated. Add the black beans, pinto beans, corn, and diced tomatoes with green chilies. Stir to combine.

4. Add Broth and Simmer:
Pour in the beef broth and bring the mixture to a boil. Reduce the heat to a simmer and let it cook for about 15-20 minutes, allowing the flavors to meld together.

This is very healthy and so delicious
Ingredients
1 large cabbage.
2 small onions diced
2 cans of stewed tomatoes.
1 pouch Lipton Onion Soup Mix any flavor.
1 large celery chopped very small.
Ground beef
Directions
Fill a large saucepan halfway with water, bring to a boil, then add the vegetables, then bring to a simmer.
Cook 1-2 pounds of burger separately draining any fat.
Add any spices you like and Lipton soup mix.
Add the meat, simmer for a few more minutes then taste
This soup is great for all of us, especially on rainy days!

Instant Pot Stuffed Peppers Soup

Ingredients
1 pound ground beef
1/2 onion (chopped)
1 red bell pepper (diced)
1 green bell pepper (diced)
1 can diced tomatoes (14 oz.)
1 can tomato sauce (14 oz.)
3 cups beef broth
1 tsp oregano
1 tsp garlic salt
1 Tbsp Worcestershire sauce
1/2 tsp pepper
2 cups white rice (cooked)
Instructions
Turn your Instant pot to the sauté setting.
Add in the ground beef and break it apart and allow it to brown.
Once brown, cancel the sauté setting and drain off any excess grease.
Place everything else (except the rice) into the instant pot. Stir to combine.
Add the lid. Make sure the top is set to sealing.
Then set the pressure to 5 minutes.
Once finished do a quick release. The peppers will be soft and delicious.
Stir before serving.
Spoon into a bowl and top with a spoonful of cooked rice.
Enjoy!

Corned Beef and Cabbage Soup. serves 8

ingredients
1 tablespoon oil
1 onion, diced
2 carrots, diced
2 stalks celery, diced
3 cloves garlic, chopped
4 cups chicken broth (or beef broth or ham broth)
1 pound raw corned beef in pickling juices, diced
2 potatoes, peeled and diced
2 cups cabbage, shredded
salt and pepper to taste
directions
Heat the oil in a large sauce pan over medium-high heat, add the onions, carrots and celery and cook until tender, about 3-5 minutes, before adding the garlic and cooking until fragrant, about a minute.
Add the broth, corned beef, potatoes and cabbage, bring to a boil, reduce the heat and simmer until the beef is tender, about 1-2 hours.
Slow Cooker: Optionally implement step 1 before throwing everything into the slow cooker and cooking on low for 8-10 hours or on high for 2-4 hours.
Option: Replace the potatoes with celeriac or cauliflower.
Option: Add 1/2 cup barley

🍲 Cabbage Soup 🍲
Ingredients:

1 large cabbage, chopped
2 small onions, diced
2 cans of stewed tomatoes
1 pouch of Lipton Onion Soup Mix (any flavor)
1 large celery stalk, chopped finely
Ground beef (1-2 pounds)
Instructions:

Fill a large saucepan halfway with water and bring it to a boil.
Add the chopped cabbage, diced onions, and finely chopped celery to the boiling water, then reduce to a simmer.
In a separate pan, cook the ground beef over medium heat until browned. Make sure to drain any excess fat.
Stir in your favorite spices along with the Lipton Onion Soup Mix into the beef.
Add the seasoned beef and stewed tomatoes to the simmering vegetables.
Continue to simmer the mixture for a few more minutes, then taste and adjust seasoning as needed.
