🍝 PASTA WITH PEPPERS & TOMATOES 🌶️🍅
Ingredients
6.3 oz mezzi rigatoni
1 yellow bell pepper
20 cherry tomatoes
2–3 tablespoons extra virgin olive oil
Salt, to taste
Black pepper, to taste
Crushed red pepper flakes, optional
1 cup water
Reserved pasta cooking water, as needed
👩‍🍳 Instructions
1. Prepare the pepper

Wash the bell pepper, cut it in half, and remove the seeds and white membranes. Slice it into thin strips.

2. Cook the pepper

In a large skillet, heat a drizzle of extra virgin olive oil. Add the sliced pepper and, if desired, a pinch of crushed red pepper flakes. Cook over medium-high heat for a few minutes.

Lower the heat to medium, add about 1 cup of water, and let the pepper cook gently for about 10 minutes, until tender.

3. Add the tomatoes
