Caramel Peach Crisp Cheesecake
Ingredients
1. The Graham Cracker Crust
• 1 ½ cups Graham cracker crumbs (about 11-12 full sheets)
• ¼ cup Light brown sugar, packed
• 6 tbsp Unsalted butter, melted
• ½ tsp Ground cinnamon
2. The Spiced Peach Filling
• 2 ½ cups Fresh peaches, peeled and diced (about 3-4 medium peaches)
• 2 tbsp Light brown sugar
• 1 tbsp Cornstarch (to thicken the juices)
• ½ tsp Ground cinnamon
• 1 tsp Lemon juice
3. The Brown Sugar Crisp Topping
• ½ cup All-purpose flour
• ½ cup Rolled oats (old-fashioned)
• ½ cup Light brown sugar, packed
• ½ tsp Ground cinnamon
• ¼ cup Unsalted butter, cold and cubed
4. The Creamy Cheesecake Layer
• 24 oz (3 blocks) Cream cheese, softened to room temperature
• 1 cup Granulated sugar
• 3 large Eggs, room temperature
• ¼ cup Sour cream or full-fat Greek yogurt, room temperature
• 1 tbsp Vanilla extract
5. The Garnish
• Store-bought or homemade caramel sauce for drizzling
• Whipped cream for topping
