I made some Spring vegetable fried rice 🍛 with leftover white rice I had sitting in my fridge and it turned out absolutely wonderful! I’m having it for lunch with toaster oven baked salmon 🐟and half an avocado 🥑.

To make the rice heat a tablespoon of olive oil in a pan on the stove top. Add 1/4 cup chopped yellow onion and sauté for 3-4 minutes until the onion starts to soften. Add 1/2 cup chopped asparagus and 1/2 cup sliced cremini mushrooms. Season with salt and pepper and continue to cook another 3-4 minutes until tender then mix in 1/2 cup peas until heated through. Once the veggies are cooked add 1 cup cooked white rice. Turn up the heat if needed and sauté the rice into the veggies. Push the rice and veggies to the sides of the pan to form a hole in the middle. Add a splash of olive oil then add a beaten egg. Let the eggs set for a moment then scramble the eggs into the rice. Makes about 2 servings.

Fridge dump salad for dish today! I used leftovers and easy to grab items in my fridge (except the ripe tomatoes always kept on the counter) to make it. Arugula 🌿 with chickpeas, quinoa, ripe cherry tomatoes 🍅 , shredded Parmesan cheese 🧀 and kalamata olives with a generous squeeze of lemon 🍋 , extra virgin olive oil, cracked black pepper and sea salt. Having the right ingredients on hand can make a quick and tasty meal! It was the easiest, most delicious nourishing salad. Hope your having a great day!

All my salad loving dreams came true with this yummy bowl of goodness! I had some leftover rice 🍚 in the fridge and mixed it up with arugula 🌿, romaine lettuce 🥬, wild albacore tuna 🐟, jammy eggs 🍳, avocado 🥑, chickpeas, lemon juice and extra virgin olive oil and seasoned with sea salt and cracked black pepper. It was so freaking good! Hope your having a great day.

This is a meal often put on repeat because it’s balanced, nourishing, fresh and flavorful as well as inexpensive and it takes barely anytime to make!

Wild albacore tuna 🐟 packed in olive oil with mashed avocado 🥑 on toasted sourdough 🍞, herby tomato slices 🍅, cucumber 🥒, a hard boiled egg 🥚 and lemony arugula 🌿. I squeezed some extra lemon on top. So simple and so tasty. I hope you’re having a great day!

Fattoush salad for one made with cucumber, cherry tomatoes, red onion, capers, fresh basil and torn pita bread tossed in olive oil and red wine vinegar, seasoned with salt and pepper. Super simple and delicious plus no cooking required when the temps outside hit 90. Hope you’re having a great day!
