Get ready for a burst of flavor with this one-pan crispy lemon garlic chicken thighs! Perfect for an easy weeknight dinner. 🍋🍗✨
Ingredients:
- 6 bone-in, skin-on chicken thighs
- 2 medium fresh lemons
- 4-5 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 2 tablespoons unsalted butter, softened
- A few sprigs fresh thyme
- Salt, to taste
- Freshly ground black pepper, to taste
- 1/4 cup (60 ml) chicken broth
Directions:
1. Start by patting your chicken thighs dry with paper towels. Generously season both sides with salt and freshly ground black pepper. Get that flavor in there!
2. Preheat your oven to 425°F (220°C). While it’s heating up, grab an oven-safe skillet and heat 2 tablespoons of olive oil over medium-high heat until it’s nice and shimmering (but not smokin’!).
3. Gently place the chicken thighs skin-side down in the hot skillet. Resist the urge to move them for about 6-8 minutes while they sear away, developing a glorious deep golden brown crispy skin.
4. Give those thighs a flip and cook the other side for about 3 minutes. Then, take them out of the skillet and place them on a plate for a moment.
5. Reduce the heat to medium and add the remaining tablespoon of olive oil along with the softened butter to the skillet. Toss in the minced garlic and fresh thyme sprigs, stirring for about 30 seconds until fragrant—just don’t let that garlic burn!
6. Add the lemon slices to the skillet (remember to save one lemon for zesting later) and let them brown for a couple of minutes.
7. Now, pour in the chicken broth and scrape up all those delicious browned bits from the bottom of the pan with a wooden spoon. Don’t waste that flavor!
8. Return the chicken thighs to the skillet, skin-side up. Then, carefully transfer the skillet to your preheated oven and roast for about 12-15 minutes, or until the internal temperature reaches 165°F (74°C).
9. Once cooked, take the skillet out of the oven (watch out, it’s hot!), and sprinkle some freshly grated lemon zest over the chicken for that final zesty touch.
10. Let your chicken rest for about 5 minutes before diving in—this helps keep all those juicy flavors locked in.
