This 1 gallon homemade kimchi cost me about $5 to make. Why pay $30?

Recipe:

- Soak cut cabbages in salt water for 8 hrs
3 medium sized napa cabbages
1/4 cup salt
water

- Sauce
2 cups of gochugaru (sun dried, coarse)
1/4 onion, 5 cloves of garlic, 1/2โ€ cube ginger blended
1/4 cup rice flour cooked with water into paste
2 tbsp of sugar
2 tbsp of fish sauce
1 cup of water

- Mix everything together and leave the jar out overnight for fermentation process to kick in.

Shiso leaf jangajji (๊นป์žŽ์žฅ์•„์ฐŒ) makes such a great banchan! Itโ€™s fresh and bold with flavors. Goes perfectly with steamed rice. I used to dislike it as a kid when my grandma made it but now I see what Iโ€™ve been missing out.

This 3 Michelin star restaurant Le Bernardin was such an inspiration. From the start to finish, they guided my journey with thoughtfully prepared and delicious courses. At the end of the night, I felt like my canvas was filled with flavors I did not know they existed.
