Homemade Pickled Beets Recipe
Ingredients:
6 medium beets (washed and trimmed)
1 cup white vinegar
1 cup water
1/2 cup granulated sugar
1/2 teaspoon salt
1/4 teaspoon ground cloves (optional)
1/2 teaspoon whole black peppercorns (optional)
1 cinnamon stick (optional)
Instructions:
Boil the beets: Place beets in a large pot, cover with water, and boil until tender (about 30–40 minutes). Drain and let cool.
Peel and slice: Once cool, peel the skins off (they should slide off easily). Slice into rounds or wedges.
Prepare the brine: In a saucepan, combine vinegar, water, sugar, salt, and optional spices. Bring to a boil, stirring until sugar dissolves.
Pack the jars: Add sliced beets to sterilized mason jars. Pour the hot brine over them, leaving about 1/2 inch of headspace.
Seal and chill: Seal the jars with lids. Let cool, then refrigerate for at least 24 hours before eating. (They taste even better after a few days!)
Keeps up to 4–6 weeks in the fridge.

This Creamy Sun-Dried Tomato Shrimp with Spinach Pasta is a showstopper! Perfect for impressing guests or enjoying a cozy night in!

- Creamy Sun-Dried Tomato Shrimp with Spinach Pasta

- Ingredients:

- 8 oz pasta (fettuccine or penne)

- 1 lb shrimp, peeled and deveined

- 1 tablespoon olive oil

- 3 cloves garlic, minced

- 1 cup sun-dried tomatoes, chopped

- 1 cup heavy cream

- 1 cup fresh spinach, chopped

- 1/2 cup grated Parmesan cheese

- Salt and pepper to taste

- Fresh basil for garnish

Directions:

1. Cook pasta according to package instructions until al dente. Drain and set aside.

2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.

3. Add shrimp to the skillet and cook for 2-3 minutes on each side until pink and cooked through. Remove shrimp and set aside.

4. In the same skillet, add sun-dried tomatoes and heavy cream. Stir to combine and bring to a simmer.

5. Add the cooked pasta and shrimp back into the skillet. Toss to coat in the creamy sauce.

6. Stir in chopped spinach and Parmesan cheese. Cook for an additional 2-3 minutes until the spinach is wilted and the sauce is heated through.

7. Season with salt and pepper to taste. Garnish with fresh basil before serving.

Ingredients You’ll Need

4 salmon fillets (skinless, about 6 oz each)
1 bunch asparagus, trimmed
3 tablespoons butter, melted
3 cloves garlic, minced
2 tablespoons lemon juice (freshly squeezed)
1 tablespoon lemon zest
1 tablespoon olive oil
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Lemon slices, for serving
Optional: A pinch of red pepper flakes for a slight kick!

️ How to Make Baked Salmon in Foil with Asparagus

Step 1: Preheat and Prep
Preheat your oven to 400°F (200°C). Line a baking sheet with foil, or prepare individual foil sheets for each portion.

Step 2: Arrange the Ingredients
Place the trimmed asparagus in the center of the foil and drizzle with a bit of olive oil. Season lightly with salt and pepper. Lay the salmon fillets over the asparagus.

Step 3: Make the Garlic Lemon Butter Sauce
In a small bowl, mix the melted butter, minced garlic, lemon juice, and lemon zest. Stir until well combined.

Homemade Blackberry Cobbler

Ingredients:

2 ½ cups fresh blackberries, washed
1 cup sugar
1 cup all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup milk
1 stick (½ cup) unsalted butter, melted

Instructions:

Step 1:
In a large bowl, combine blackberries and sugar. Let the mixture sit for 25–30 minutes to release the juices. This process is called macerating and helps sweeten and soften the berries.

Step 2:
Preheat your oven to 375°F (190°C).

Step 3:
In a separate bowl, mix together the flour, baking powder, salt, and milk. Stir in the melted butter until the batter is mostly smooth.

Step 4:
Pour the batter into a clean, ungreased baking dish. Spread it evenly. Spoon the blackberry and sugar mixture on top, making sure to pour all the juice over the batter as well.

Step 5:
Bake for 45 to 60 minutes, or until the top is golden and the edges are bubbling. Allow the cobbler to cool for at least 15 minutes so it can set.

1/4 c brown sugar, firmly packed
1/3 c soy sauce (i’m gonna try a low sodium version)
