🍫 Reese's Peanut Butter Cup Roll Cake
🛒 Ingredients:
For the Chocolate Sponge Cake:
3 large eggs
¾ cup granulated sugar
2 teaspoons brewed coffee or water
1 teaspoon vanilla extract
¼ cup unsweetened cocoa powder
¼ teaspoon salt
1 teaspoon baking powder
¾ cup all-purpose flour
Powdered sugar (for rolling)
For the Peanut Butter Filling:
2 ounces cream cheese, softened
⅓ cup creamy peanut butter
1 cup powdered sugar
1 teaspoon vanilla extract
2–4 tablespoons heavy whipping cream
½ cup chopped Reese's Peanut Butter Cups
For the Chocolate Ganache Topping:
1 cup semi-sweet chocolate chips
⅔ cup heavy whipping cream
½ cup chopped Reese's Peanut Butter Cups (for garnish)

1. Prepare the Cake:
Preheat your oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper and spray with non-stick cooking spray.
In a large bowl, beat the eggs on high speed for 3 minutes until frothy and pale. Add granulated sugar, brewed coffee (or water), and vanilla extract; beat until combined.
Sift in cocoa powder, salt, and baking powder; mix until incorporated. Gradually fold in the flour until just combined.
Pour the batter into the prepared pan, spreading it evenly. Bake for 10–15 minutes, or until the cake springs back when lightly touched.
2. Roll the Cake:
While the cake is baking, lay a clean kitchen towel on a flat surface and dust it generously with powdered sugar.
Once the cake is done, immediately invert it onto the prepared towel. Carefully peel off the parchment paper.
Starting from the short end, roll the cake up with the towel. Let it cool completely while rolled.
3. Prepare the Filling:
In a medium bowl, beat the softened cream cheese and peanut butter until smooth.
Add powdered sugar and vanilla extract; beat until combined.
Gradually add heavy whipping cream, one tablespoon at a time, until the filling reaches a spreadable consistency.
Fold in the chopped Reese's Peanut Butter Cups.
4. Assemble the Cake:
Once the cake has cooled, carefully unroll it. Spread the peanut butter filling evenly over the cake, leaving a 1-inch border around the edges.
Gently re-roll the cake without the towel. Place the roll seam-side down on a serving platter.
Cover and refrigerate for at least 1 hour to set.
5. Prepare the Ganache:
In a microwave-safe bowl, combine the chocolate chips and heavy whipping cream. Microwave in 30-second intervals, stirring after each, until the chocolate is melted and the mixture is smooth.
Let the ganache cool slightly, then pour it over the chilled cake roll, spreading it evenly.
Sprinkle the top with additional chopped Reese's Peanut Butter Cups.
6. Serve:
Refrigerate the cake until the ganache is set. Slice and serve.
