Golden Honey Butter Sweet Potato Cornbread
Ingredients:
1 cup mashed sweet potato (about 1 medium potato, cooked and mashed)
1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup milk
1/4 cup honey
1/4 cup melted butter
1 large egg
Honey Butter Topping:
1/4 cup softened butter
2 tbsp honey
Directions:
Preheat oven to 375°F (190°C) and grease an 8x8-inch baking dish or a cast-iron skillet.
In a large bowl, mix the cornmeal, flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the mashed sweet potato, milk, honey, melted butter, and egg until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Pour the batter into the prepared baking dish and smooth the top.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
While the cornbread is baking, prepare the honey butter by mixing the softened butter and honey until well combined.
Let the cornbread cool slightly, then spread the honey butter on top before serving.
