Chewy Oatmeal Butterscotch Delights

Ingredients:

1 ½ cups (187.5 g) all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
2 cups (180 g) old-fashioned oats
½ cup (1 stick / 113 g) unsalted butter, room temperature
1 cup (200 g) light brown sugar, packed
2 large eggs, room temperature
1 teaspoon vanilla extract
1 ½ cups (360 g) butterscotch chips
Directions:

Preheat oven to 400°F. Line baking sheets with parchment paper.
In a large mixing bowl, stir together flour, baking powder, baking soda, salt, and oats until evenly dispersed.
To the bowl of a stand mixer with the paddle attachment, add butter and brown sugar. Beat on low speed until smooth.
Add eggs and vanilla. Mix until all ingredients are fully incorporated, stopping to scrape down the sides of the bowl as needed.
With the mixer still on low speed, slowly add the dry ingredients until fully incorporated. Add butterscotch chips and mix until just combined.
Using a 2-tablespoon cookie scoop, drop the dough onto the lined baking sheets, leaving about 2 inches of space between each cookie.
Bake for 7-8 minutes. They may look slightly doughy, and that is okay.
Let the cookies rest on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.

A Sumptuous Layered Delight: Strawberry Pretzel Salad

Ingredients:

Pretzel Crust

4 cups salted pretzels
¾ cup (1 ½ sticks / 170 g) unsalted butter, melted
¼ cup granulated sugar
Whipped Cream Cheese Layer

4 ounces cream cheese, room temperature
½ cup (100 g) granulated sugar
2 cups (476 g) heavy cream
½ teaspoon vanilla extract
1 pinch kosher salt
Jello Layer

1 package (6 ounces) strawberry Jell-O mix
2 cups boiling water
Topping

16 ounces fresh strawberries, sliced
Directions:

Pretzel Crust Preparation: Preheat oven to 375°F. Crush pretzels to a fine crumb using a food processor. Mix pretzel crumbs with melted butter and sugar, then press firmly into the bottom of a 9×13 baking dish. Bake for 10 minutes and cool completely.

Whipped Cream Cheese Layer: In a chilled mixing bowl, beat cream cheese and sugar until smooth. Add heavy cream and mix until stiff peaks form. Incorporate vanilla and salt. Spread over the cooled crust and chill for at least an hour.

Jello Layer: Dissolve strawberry jello in boiling water. Chill until slightly thickened.

½ teaspoon onion powder
½ cup (116 g) mayonnaise, room temperature
1 cup (100 g) parmesan cheese, shredded, divided
¼ teaspoon garlic powder
¼ teaspoon kosher salt
¼ teaspoon black pepper
Fresh parsley, chopped, for garnish
Directions:

Preheat oven to 400°F. Lightly spray a 9x13-inch baking dish or sheet pan with cooking spray.
In a small bowl, mix salt, pepper, garlic powder, and onion powder. Season the chicken breasts evenly with the mixture.
Place the seasoned chicken in the prepared baking dish.

Lemon Filling:

1 can (14 ounces) sweetened condensed milk
2 large egg yolks
½ cup (115 g) freshly squeezed lemon juice, about 5 lemons
1 teaspoon lemon zest
⅛ teaspoon kosher salt
Directions:

Preheat oven to 350°F (175°C) and line a 9x9-inch pan with parchment paper.
For the oat crust, mix oats, flour, brown sugar, baking powder, and baking soda. Add melted butter and mix until crumbly. Reserve half for topping.

Pecan Glaze:

6 tablespoons butter, melted
1 cup (200g) light brown sugar
¼ cup (61g) buttermilk
⅛ teaspoon kosher salt
1 cup pecans, roughly chopped
Directions:

Preheat the oven to 350°F. Prepare a 9×13 baking dish with baking spray.
Beat the butter and brown sugar together until smooth.
Add eggs one at a time, then pour in the buttermilk and vanilla, mixing until combined.
Stir in the flour, baking soda, and salt until just incorporated.

3 teaspoons instant dry yeast
1½ cups warm water (about 105 degrees F)
2 tablespoons granulated white sugar
4 cups all-purpose flour
1 teaspoon salt
1 cup water (for crust)
2 teaspoons baking soda (for crust)
Coarse sea salt or kosher salt (for crust)
¼ cup (½ stick) butter, melted (for crust)
Directions:

In a large bowl, combine yeast, warm water, and sugar. Add in the flour and salt, and knead until smooth. You can use your hands or a stand mixer with a dough hook.
Grease a second bowl with nonstick cooking spray and transfer the dough into it. Cover with greased plastic wrap or a clean dish towel and let rise for 30 minutes in a warm place.
Preheat the oven to 425°F (218°C). Line 2 baking sheets with parchment paper or silpat mats.
Divide the dough into 8 equal parts. Roll each part into a rope about 24 to 26 inches long and form into a pretzel shape.

1/2 cup brown sugar
1/4 cup white sugar

1 2/3 cup all-purpose flour

1/2 cup white chocolate chips
1/2 cup pastel M&M candies
Directions:
Preheat oven to 350°F (175°C).
Melt butter in a microwave-safe dish in 20-second increments until fully melted.
In a large mixing bowl, combine melted butter with brown and white sugar, stirring well.
Beat in vanilla extract and egg until just combined.
Mix in flour, baking soda, and salt until just combined.
Stir in chocolate chips and pastel M&M candies by hand, reserving a few candies to press on top of the dough, if desired.
Use a large cookie scoop to portion 12 cookies onto a large, ungreased baking sheet.

Ingredients:

1 ½ pounds chicken tenderloins
1/4 cup brown sugar
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon cracked pepper
1/2 teaspoon ground mustard
1 pound bacon
Ranch dressing for dipping
Directions:

Use a paper towel to pat dry the chicken tenders.
Mix the brown sugar, chili powder, salt, pepper, and mustard in a bowl.
Sprinkle about ¾ of the seasoning blend over the chicken and rub it in to coat both sides.
Wrap each piece of chicken in a strip of bacon, tucking the ends under to keep it wrapped.
Rub the remaining spices over the bacon to coat.
Spritz the air fryer basket with non-stick spray and arrange chicken in an even layer, possibly working in batches.
Air fry at 400 degrees for 10 minutes, flipping halfway, until chicken reaches an internal temperature of 165 degrees.

Directions:

Remove peas from freezer and place in a colander to slightly thaw while preparing the dressing.
In a large bowl, whisk together mayonnaise, sour cream, sugar, apple cider vinegar, salt, and black pepper.

Directions:

Combine Ingredients: In a large mixing bowl or the bowl of a stand mixer, whisk together the white cake mix, orange gelatin powder, and orange zest until fully combined.

Start by placing the bread on a cutting board. Using a bread knife, slice ½ inch deep, ensuring not to cut all the way through, leaving about an inch at the bottom. Rotate the bread 90 degrees and slice again to create a grid pattern.
Next, prepare a sling with two long pieces of foil in an 'x' shape. Place the bread in the center and set it in your air fryer basket.
Tuck the shredded mozzarella and Parmesan cheese into the slices of the bread.
