𝘾𝙝𝙚𝙚𝙨𝙮 𝘽𝙖𝙠𝙚𝙙 𝙁𝙖𝙟𝙞𝙩𝙖 𝘾𝙝𝙞𝙘𝙠𝙚𝙣🍗🧀
Yield: 4 servings
Prep Time: 10 minutes
Cook Time: 25–30 minutes
Ingredients:
4 boneless, skinless chicken breasts

1 tbsp olive oil

1 packet fajita seasoning (or homemade fajita seasoning, recipe below)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cumin

1/4 tsp chili powder (optional, for extra spice)

Salt and pepper, to taste

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small red onion, thinly sliced

1 cup shredded Mexican blend cheese (or cheddar, mozzarella, or Monterey Jack)

1 tbsp fresh cilantro, chopped (optional, for garnish)

Lime wedges (optional, for serving)

Instructions:
1. Preheat and Prepare the Chicken:
Preheat your oven to 375°F (190°C).

Place the chicken breasts on a baking sheet lined with parchment paper or lightly greased with cooking spray.

2. Season the Chicken:
Drizzle the olive oil over the chicken breasts to coat them.

In a small bowl, combine the fajita seasoning, garlic powder, onion powder, cumin, chili powder, salt, and pepper.

Rub the seasoning mixture evenly over both sides of the chicken breasts.

3. Bake the Chicken:
Place the chicken breasts in the preheated oven and bake for 20–25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).

While the chicken is baking, sauté the sliced bell peppers and onion in a pan with a little olive oil over medium heat for about 5–7 minutes, until they are tender but still slightly crisp. Set aside.

4. Add the Toppings:
Once the chicken is done baking, remove it from the oven and top each chicken breast with the sautéed peppers and onions.

Sprinkle shredded cheese over the top of each chicken breast.

Return the pan to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

5. Serve:
Remove the chicken from the oven and garnish with fresh cilantro (optional).

Serve with lime wedges for a burst of citrus, and pair with rice, tortillas, or a fresh salad.

💡 Tips:
Customize the heat: If you like your fajitas spicier, add jalapeño slices to the peppers and onions while sautéing, or top the chicken with sliced fresh chilies before serving.

Add some creaminess: For a creamy twist, you can drizzle the chicken with sour cream or guacamole just before serving.

Make it a complete meal: Serve with Spanish rice, black beans, or corn on the cob for a hearty dinner.

𝘽𝙖𝙠𝙚𝙙 𝘾𝙧𝙚𝙖𝙢 𝘾𝙝𝙚𝙚𝙨𝙚 𝘾𝙝𝙞𝙘𝙠𝙚𝙣 𝙏𝙖𝙦𝙪𝙞𝙩𝙤𝙨🧀🥰
Yield: 12 taquitos
Prep Time: 15 minutes
Cook Time: 20–25 minutes
Ingredients:
2 cups cooked, shredded chicken (rotisserie chicken works great!)

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup green salsa or enchilada sauce (for a tangy flavor)

1 tsp ground cumin

1 tsp garlic powder

1/2 tsp onion powder

1/4 tsp chili powder

Salt and pepper to taste

12 small flour tortillas (soft taco size)

2 tbsp olive oil (for brushing)

Optional toppings: sour cream, guacamole, salsa, or cilantro

Instructions:
1. Prepare the Chicken Filling:
In a large mixing bowl, combine the shredded chicken, cream cheese, shredded cheddar cheese, green salsa (or enchilada sauce), cumin, garlic powder, onion powder, chili powder, salt, and pepper. Mix until everything is well combined and creamy.

2. Roll the Taquitos:
Preheat your oven to 400°F (200°C).

Warm the flour tortillas in the microwave for about 15–20 seconds to make them more pliable.

Spoon about 2–3 tablespoons of the chicken mixture onto the center of each tortilla.

Roll the tortillas tightly around the filling, making sure the ends are tucked in.

3. Bake the Taquitos:
Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper or sprayed with cooking spray.

Lightly brush the tops of the taquitos with olive oil to help them crisp up in the oven.

Bake for 20–25 minutes, or until the taquitos are golden and crispy, turning halfway through the baking time for even crispiness.

4. Serve:
Once baked, remove the taquitos from the oven and allow them to cool for a couple of minutes.

Serve hot with your favorite toppings, such as sour cream, guacamole, salsa, or fresh cilantro.

💡 Tips:
For extra flavor, you can add chopped green onions, jalapeños, or black beans to the chicken filling.

If you prefer a spicier kick, try using spicy salsa or adding cayenne pepper to the filling.

You can freeze these taquitos before baking. Just wrap them tightly in plastic wrap or foil and store them in a freezer bag for up to 3 months. Bake from frozen at 400°F (200°C) for about 25–30 minutes.

Yield: 10–12 pies
Prep Time: 30 minutes
Cook Time: 3–4 minutes per pie
Chill Time (optional): 15–30 minutes
Ingredients:
For the Apple Pie Filling:
2 cups peeled and diced apples (Granny Smith or Honeycrisp work well)

2 tbsp butter

1/4 cup brown sugar

1 tsp cinnamon

1/4 tsp nutmeg

1 tsp lemon juice

1 tbsp cornstarch mixed with 2 tbsp water (slurry)

For the Cheesecake Filling:
6 oz cream cheese, softened

1/4 cup powdered sugar

1/2 tsp vanilla extract

For Assembly:
1 package refrigerated pie dough (or use homemade)

1 egg, beaten (for egg wash)

Oil for frying (vegetable or canola)

Powdered sugar or cinnamon sugar for dusting (optional)

Instructions:
1. Make the Apple Filling:
In a skillet over medium heat, melt the butter.

Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook 5–7 minutes until apples soften.

2. Make the Cheesecake Filling:
In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Chill while you prepare the pies.

3. Assemble the Pies:
Roll out pie dough slightly and cut into 4- to 5-inch circles.

On each circle, add about 1 teaspoon of cheesecake filling and 1 tablespoon of apple pie filling.

Fold the dough over to form a half-moon shape, pressing edges to seal. Crimp with a fork.

Chill assembled pies in the fridge for 15–30 minutes to help them stay sealed during frying.

4. Fry the Pies:
Heat oil to 350°F (175°C) in a deep pan.

Fry pies 2–3 at a time for about 2–4 minutes, flipping once, until golden brown.

Dust warm pies with powdered sugar or cinnamon sugar.

Serve warm with a drizzle of caramel sauce or a scoop of vanilla ice cream.

💡 Tips:
You can bake these at 375°F for 18–22 minutes if you prefer (brush with egg wash before baking).

Add a touch of bourbon or maple syrup to the apple filling for extra flavor.

Make them mini for party-sized bites!

Ingredients:
For the Filling:

1 lb ground beef

1/2 cup onion, finely chopped

1 garlic clove, minced

1/2 tsp salt

1/4 tsp ground black pepper

2 tbsp ketchup

1 tbsp yellow mustard

1 tbsp Worcestershire sauce

1/4 cup pickle chips or relish (optional, for true cheeseburger flavor)

1 1/2 cups shredded cheddar cheese

2 eggs

Optional Garnishes:

𝘽𝙚𝙚𝙛 𝙋𝙖𝙨𝙩𝙖 𝙞𝙣 𝙎𝙖𝙫𝙤𝙧𝙮 𝘽𝙧𝙤𝙩𝙝 𝙬𝙞𝙩𝙝 𝙋𝙖𝙧𝙢𝙚𝙨𝙖𝙣🍝🧀
Ingredients:
For the Beef:

1 lb (450g) beef stew meat or flank steak, cut into small cubes

2 tbsp olive oil

2 cloves garlic, minced

Salt and pepper to taste

1 tbsp soy sauce (optional for deeper umami flavor)

For the Broth:

4 cups beef broth (preferably homemade or low-sodium)

1 cup dry white wine (optional for depth of flavor)

1 medium onion, diced

2 medium carrots, peeled and sliced

2 celery stalks, chopped

1 bay leaf

1 tsp thyme (fresh or dried)

1 tsp dried oregano

1 tbsp balsamic vinegar (optional for sweetness and acidity)

Salt and pepper to taste

For the Pasta:

2 cups uncooked pasta (such as fettuccine, pappardelle, or any wide pasta)

2 tbsp olive oil or butter

Salt for pasta water

For the Finishing Touch:

Freshly grated Parmesan cheese

Fresh parsley, chopped (optional for garnish)

Instructions:
Step 1: Brown the Beef
Prepare the Beef: Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Season the beef with salt and pepper.

Sear the Beef: Once the oil is hot, add the beef in batches to avoid overcrowding. Sear the beef on all sides until golden brown, about 5-7 minutes per batch. Remove the beef and set it aside.

Step 2: Prepare the Broth
Sauté Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened.

Add Garlic and Herbs: Add the minced garlic, thyme, and oregano. Stir for about 30 seconds until fragrant.

Deglaze the Pot: If using, pour in the white wine, scraping up any browned bits from the bottom of the pot. Allow the wine to reduce by half (about 3-4 minutes).

Simmer the Broth: Add the beef broth, bay leaf, balsamic vinegar (optional), and the seared beef back into the pot. Bring it to a boil, then reduce the heat and let it simmer uncovered for about 45 minutes. Skim off any impurities that float to the surface.

Taste and Adjust Seasoning: After 45 minutes, taste the broth and adjust with salt and pepper as needed.

Step 3: Cook the Pasta
Cook the Pasta: While the broth simmers, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain, reserving about 1 cup of pasta cooking water.

Step 4: Combine the Pasta with the Broth
Add Pasta to the Broth: Once the broth has simmered and the beef is tender, add the cooked pasta to the pot. Stir gently to combine, adding a bit of the reserved pasta cooking water if the broth needs to be loosened.

Finish with Olive Oil or Butter: Stir in 2 tablespoons of olive oil or butter to enrich the dish and give it a silky texture.

Step 5: Serve
Serve: Ladle the pasta and beef into bowls. Sprinkle generously with freshly grated Parmesan cheese.

Garnish: Add a sprinkle of fresh parsley if desired for a fresh, vibrant touch.
