Ingredients:
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 packet fajita seasoning (or homemade fajita seasoning, recipe below)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cumin
1/4 tsp chili powder (optional, for extra spice)
Salt and pepper, to taste
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, thinly sliced
1 cup shredded Mexican blend cheese (or cheddar, mozzarella, or Monterey Jack)
1 tbsp fresh cilantro, chopped (optional, for garnish)
Lime wedges (optional, for serving)
Instructions:
1. Preheat and Prepare the Chicken:
Preheat your oven to 375°F (190°C).
Place the chicken breasts on a baking sheet lined with parchment paper or lightly greased with cooking spray.
2. Season the Chicken:
Drizzle the olive oil over the chicken breasts to coat them.
In a small bowl, combine the fajita seasoning, garlic powder, onion powder, cumin, chili powder, salt, and pepper.
Rub the seasoning mixture evenly over both sides of the chicken breasts.
3. Bake the Chicken:
Place the chicken breasts in the preheated oven and bake for 20–25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
While the chicken is baking, sauté the sliced bell peppers and onion in a pan with a little olive oil over medium heat for about 5–7 minutes, until they are tender but still slightly crisp. Set aside.
4. Add the Toppings:
Once the chicken is done baking, remove it from the oven and top each chicken breast with the sautéed peppers and onions.
Sprinkle shredded cheese over the top of each chicken breast.
Return the pan to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
5. Serve:
Remove the chicken from the oven and garnish with fresh cilantro (optional).
Serve with lime wedges for a burst of citrus, and pair with rice, tortillas, or a fresh salad.
💡 Tips:
Customize the heat: If you like your fajitas spicier, add jalapeño slices to the peppers and onions while sautéing, or top the chicken with sliced fresh chilies before serving.
Add some creaminess: For a creamy twist, you can drizzle the chicken with sour cream or guacamole just before serving.
Make it a complete meal: Serve with Spanish rice, black beans, or corn on the cob for a hearty dinner.
