Savory Ground Beef Skillet with Zucchini and Sweet Potatoes
Ingredients:
1 lb (450 g) ground beef
1 medium onion, diced
2 cloves garlic, minced
2 medium zucchinis, sliced into half-moons
2 medium sweet potatoes, peeled and diced
1 tsp ground cumin
1 tsp smoked paprika
½ tsp dried oregano
½ tsp chili powder (optional)
Salt and pepper to taste
2 tbsp olive oil
¼ cup beef broth or water
Fresh parsley or cilantro, chopped (optional garnish)
Directions:
Heat 1 tbsp olive oil in a large skillet over medium heat.
Add ground beef, cook breaking it up until browned and cooked through, about 5–7 minutes. Drain excess fat if desired.
Stir in diced onion and sauté for 3 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Push beef mixture to one side of skillet; add remaining oil and diced sweet potatoes. Cook, stirring occasionally, for 5 minutes.
Mix sweet potatoes into beef, then sprinkle cumin, paprika, oregano, chili powder (if using), salt, and pepper. Stir to coat.
Pour in beef broth or water, cover skillet, reduce heat to medium-low, and cook for 8 minutes until sweet potatoes begin to soften.
Remove lid, add zucchini slices, stir everything together, and cook uncovered for 5–7 minutes until zucchini is tender-crisp and potatoes are fully cooked.
Taste and adjust seasoning with more salt and pepper if needed.
Sprinkle chopped parsley or cilantro over the skillet before serving, if desired.
