🤠 Cowboy beef & potato casserole 🥔🧀

Ingredients:

1 ½ pounds ground beef

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

1 small yellow onion, diced

3 cloves garlic, minced

1 can (10.5 ounces) cream of mushroom soup

½ cup sour cream

½ cup whole milk

2 tablespoons Worcestershire sauce

3 cups russet potatoes, thinly sliced (about 3 medium potatoes)

1 ½ cups shredded cheddar cheese, divided

½ cup shredded mozzarella cheese

2 tablespoons chopped fresh parsley (for garnish)

Step-by-step directions:

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

In a large skillet over medium heat, cook the ground beef with salt, black pepper, smoked paprika, garlic powder, and onion powder. Break it apart with a spoon and cook until browned and fully cooked, about 6–8 minutes.

Add the diced onion and minced garlic to the skillet. Cook for 2–3 minutes until softened and fragrant. Drain any excess grease if needed.

Stir in the cream of mushroom soup, sour cream, milk, and Worcestershire sauce. Mix until smooth and creamy. Let it simmer for 2–3 minutes, then remove from heat.

Arrange half of the thinly sliced potatoes evenly in the bottom of the prepared baking dish.

Spoon half of the beef mixture over the potatoes and spread evenly.

Sprinkle 1 cup of shredded cheddar cheese over the beef layer.

Add the remaining potato slices in an even layer, followed by the remaining beef mixture.

Cover the dish tightly with aluminum foil and bake for 45 minutes, or until the potatoes are tender when pierced with a fork.

Remove the foil and sprinkle the remaining ½ cup cheddar and mozzarella cheese over the top.

Return to the oven uncovered and bake for an additional 10–15 minutes, until the cheese is melted, bubbly, and lightly golden.

Remove from the oven and let the casserole rest for 10 minutes before serving. Garnish with fresh parsley.

Serve warm for a hearty, comforting meal that’s perfect for busy weeknights or family dinners.
