Milkybar Cheesecake 🍫🍰
Ingredients:
- 500g cream cheese
- 350g shortbread
- 250g Milkybar chocolate (for filling)
- 200ml whipped cream (for topping)
- 175g melted butter
- 120g icing sugar
- 350ml whipped cream (for filling)
- 250g Milkybar chocolate (for topping)
Instructions:
1. Prepare the Base:
- Crush 350g of shortbread into fine crumbs. Mix with 175g melted butter until well combined.
- Press the mixture firmly into the base of a 23 cm cake tin. Refrigerate to set.
2. Make the Cheesecake Filling:
- Melt 250g of Milkybar chocolate in the microwave or over a double boiler. Let it cool slightly.
- In a bowl, beat 500g cream cheese with 120g icing sugar until smooth.
- Fold the melted Milkybar chocolate into the cream cheese mixture.
- Whip 350ml cream until soft peaks form. Gently fold the whipped cream into the cream cheese-chocolate mixture.
3. Assemble and Chill:
- Spoon the cheesecake filling over the chilled shortbread base. Smooth the top with a spatula.
- Refrigerate for about 5 hours or until fully set.
4. Prepare the Topping:
- Melt 250g of Milkybar chocolate with 200ml whipped cream in the microwave for 90 seconds, stirring until smooth.
- Pour the chocolate mixture over the set cheesecake. Smooth the surface with a palette knife.
5. Decorate:
- Sprinkle shortbread crumbs around the edge of the cheesecake.
- Press a square of Milkybar chocolate in the center for decoration.
