Sea Salted Praline Pecan Clusters π¬π°
Ingredients:
- 1 1/4 cups pecan halves π°
- 1/2 cup packed light brown sugar π
- 1/2 cup granulated sugar π¬
- 1/2 cup heavy cream π§΄
- 3 tablespoons butter π§
- 1/4 teaspoon coarse sea salt (plus extra for sprinkling) π§
- 1 teaspoon pure vanilla or rum extract π¦
Instructions:
1. Line a large sheet pan with wax paper and lightly coat it with cooking spray or softened butter. Set aside π§΄.
2. In a deep, medium-sized microwave-safe bowl, combine pecan halves, brown sugar, granulated sugar, heavy cream, butter, and sea salt. Keep the vanilla extract aside for now π§π¬π§. Make sure the bowl is deep enough to prevent overflow while boiling.
3. Microwave the mixture on high for 6 1/2 minutes, stopping at the 3-minute mark to stir. Be cautious, as the mixture will be boiling π₯.
4. After 6 1/2 minutes, stir thoroughly, ensuring all pecans are coated. The caramel should thicken and cling to the sides of the bowl. If itβs still runny, microwave in 1-minute increments until it thickens π.
5. Let the mixture rest on the counter for 10β15 seconds, then stir in the vanilla extract π¦.
6. Using a small cookie scoop or two tablespoons, drop clusters onto the prepared wax paper or silicone mat πͺ.
7. Sprinkle the tops with extra sea salt, if desired, and let the clusters cool to room temperature to set π.
