🍫 Decadent Chocolate Swiss Roll Cake & Ice Cream 🍦
Ingredients:
- For the cake:
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large eggs, separated
- 1/2 cup granulated sugar, divided
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar (for dusting)
- For the filling:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- For the chocolate ice cream:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 4 large egg yolks
- 1 teaspoon vanilla extract
- Pinch of salt
Directions:
1. For the ice cream: In a saucepan, whisk together heavy cream, milk, sugar, cocoa powder, and salt. Heat over medium until steaming, but do not boil. In a separate bowl, whisk egg yolks. Slowly pour 1 cup of the hot cream mixture into the yolks while whisking, then return the mixture to the saucepan. Cook over low heat, stirring constantly, until thickened enough to coat the back of a spoon (about 5-7 minutes). Remove from heat, stir in vanilla, and strain through a fine-mesh sieve. Cool completely, then churn in an ice cream maker according to manufacturer's instructions. Freeze for at least 4 hours.
2. For the cake: Preheat oven to 375°F (190°C). Line a 10x15-inch jelly roll pan with parchment paper and grease lightly. In a small bowl, whisk flour, cocoa powder, baking powder, and salt. In a large bowl, beat egg whites with an electric mixer until soft peaks form. Gradually add 1/4 cup sugar, beating until stiff peaks form. In another bowl, beat egg yolks and remaining 1/4 cup sugar until thick and pale, about 3 minutes. Beat in vanilla. Fold flour mixture into yolk mixture, then gently fold in egg whites until no streaks remain. Spread batter evenly in prepared pan. Bake for 10-12 minutes, until cake springs back when touched.
3. While cake bakes, lay a clean kitchen towel on a flat surface and dust with powdered sugar. As soon as cake is done, invert onto the towel, peel off parchment paper, and roll the cake up in the towel from the short end. Let cool completely on a wire rack.
4. For the filling: In a chilled bowl, beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Unroll cooled cake, spread filling evenly over the surface, leaving a 1-inch border. Re-roll the cake gently without the towel. Place seam-side down on a serving plate. Refrigerate for at least 1 hour before slicing.
5. Serve slices of Swiss roll cake with scoops of chocolate ice cream.

Tips:
