• 6–8 large flour tortillas

🍬 Cinnamon-Sugar Coating
• ½ cup sugar

Ingredients

Cream Layer
• 2 (8-oz) blocks cream cheese, softened
• 1 cup powdered sugar
• 2 teaspoons vanilla extract
• 2 cups cold heavy whipping cream (or 1 tub Cool Whip)

Layers
• 2–3 sleeves graham crackers
• 3 cups fresh strawberries, sliced

Optional
• Extra strawberries for topping
• A drizzle of strawberry syrup



Instructions

1️⃣ Make the Cream Filling
1. In a large bowl, beat the softened cream cheese until smooth.
2. Add powdered sugar and vanilla, and beat until creamy.
3. Pour in the cold heavy whipping cream.
4. Beat on high for 2–3 minutes until thick, fluffy, and stiff peaks form.
(If using Cool Whip, gently fold it into the cream cheese mixture instead.)



2️⃣ Assemble the Cake

🍋✨ LIGHT HOMEMADE LEMON CURD

🌟 Ingredients

Lemon Curd:
• 4 eggs
• 150 g granulated sugar
• 120 ml fresh lemon juice
• Finely grated zest of 2 lemons
• 80 g butter (cubed)

For the Meringue:
• 4 egg whites (at room temperature)
• 200 g granulated sugar
• 1 teaspoon lemon juice
• 1 tablespoon cornstarch

For the light cream filling:
• 200 ml cold cream
• 2 tablespoons powdered sugar
• 1 teaspoon vanilla
• 3 tablespoons of the lemon curd we prepared

For decoration:
• Lemon zest strips
• Small meringue pieces (optional)
• Fresh mint



👩‍🍳 Preparation

🍋 1. Preparing the lemon curd
1. Whisk the eggs, sugar, lemon zest, and lemon juice in a saucepan.
2. Cook over low heat, stirring constantly, until thickened (about 5–7 minutes).
3. Remove from heat, add the butter, and stir until completely melted.
4. Cover with plastic wrap and let cool.
The consistency should be thick, shiny, and silky.



☁️ 2. Meringue base
1. Preheat the oven to 150°C.
2. Begin beating the egg whites with the lemon juice.
3. When foamy, gradually add the sugar.
4. When you achieve a shiny, firm, and stiff consistency, add the starch.
5. Line a baking sheet with parchment paper.
6. Spread the meringue with a spatula into a large rectangle (about 1.5 cm thick).
7. Bake for 30–35 minutes.
The meringue should not be completely hard; it should be crispy on the outside and slightly soft on the inside.
8. Remove from the oven and wait until it cools down.
