Creamsicle Cake

Ingredients:
For the cake:

2 ½ cups all-purpose flour

2 ½ teaspoons baking powder

½ teaspoon salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 tablespoon orange zest

½ cup orange juice

½ cup whole milk

For the orange cream frosting:

1 cup unsalted butter, softened

3 cups powdered sugar, sifted

2 tablespoons orange juice

1 teaspoon orange zest

1 teaspoon vanilla extract

2–3 tablespoons heavy cream (if needed, to adjust consistency)

Directions:

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3–4 minutes.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and orange zest.

In a small bowl, combine the orange juice and milk.

Add the dry ingredients to the butter mixture in three parts, alternating with the orange juice-milk mixture, starting and ending with the dry ingredients. Mix until just combined; do not overmix.

Divide the batter evenly between the prepared cake pans. Smooth the tops.

Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well after each addition. Stir in the orange juice, orange zest, and vanilla extract. If the frosting is too thick, add heavy cream 1 tablespoon at a time until the desired consistency is reached.

Once the cakes are fully cooled, spread a layer of frosting between the cake layers, then frost the top and sides of the cake. Smooth or decorate as desired. Refrigerate for 20–30 minutes before slicing for cleaner cuts.
