Porcupine Meatballs with Tomato Soup 🍅🍖🥣

ingredients
- 1.5 lbs ground beef
- ½ cup Minute rice
- 1 egg
- ½ cup diced yellow onion
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon garlic powder
- 2 x 10.5 oz cans condensed tomato soup
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Italian seasoning
- 1 tablespoon olive oil
- Optional: fresh chopped parsley
instructions
1️⃣ In a large mixing bowl, combine the ground beef, Minute rice, egg, diced onion, salt, pepper, and garlic powder. Mix everything together until well combined. 🍖🥚🧅
2️⃣ Scoop out about 2 tablespoons of the mixture at a time and roll into meatballs. Place them on a plate and set aside. 🍽️👐
3️⃣ In a separate bowl, whisk together the condensed tomato soup, water, Worcestershire sauce, and Italian seasoning until smooth. 🍅🥄
4️⃣ Heat the olive oil in a large skillet over medium heat. Once hot, add the meatballs and brown them on all sides. 🔥🍳
5️⃣ Drain any excess grease from the skillet, then pour the tomato soup mixture over the meatballs. Gently stir to coat them in the sauce. 🍲🔄
6️⃣ Bring the sauce to a gentle simmer, then cover the skillet with a lid and reduce the heat to low. Let the meatballs cook for about 45 minutes. ⏳🍽️
7️⃣ Remove from heat and sprinkle with fresh chopped parsley if desired. Serve and enjoy! 😋🌿
