• 2 cups cups vegetable oil (for frying)

STEPS
1. Mix potato mixture: In a bowl, mix 2 cups cups cold mashed potatoes, 0.8 cups cup shredded cheddar cheese, 2 tablespoons tbsp chopped chives or green onion, 0.3 teaspoons tsp salt, 0.3 teaspoons tsp black pepper, and 1 of the 2 large eggs, divided. Stir until well combined.
