Feta-Stuffed Greek Chicken Meatballs with Roasted Garlic Tzatziki 🧆🧄🇬🇷

Juicy chicken meatballs filled with melty feta—paired with creamy, garlicky tzatziki that takes things way up a notch.

Ingredients
For the Chicken Meatballs:
1 lb ground chicken

3 oz feta cheese, cut into small cubes

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

⅓ cup breadcrumbs (panko or regular)

1 tablespoon olive oil (for cooking)

1 egg, lightly beaten

¼ cup finely chopped red onion

Zest of 1 lemon

1 tablespoon fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and black pepper, to taste

For the Roasted Garlic Tzatziki:
1 head garlic (whole)

1 cup Greek yogurt

½ cucumber, grated and drained

1 tablespoon olive oil

1 tablespoon fresh dill, chopped

Salt and black pepper, to taste

1 tablespoon lemon juice

Instructions
1. Roast the Garlic:
Preheat oven to 375°F (190°C).
Cut the top off the garlic head, drizzle with olive oil, wrap in foil.
Roast for 35 minutes until soft and golden.
Let cool, then squeeze and mash into a paste.

2. Make the Tzatziki:
Grate cucumber and squeeze out moisture.
Mix yogurt, cucumber, mashed garlic, lemon juice, dill, salt, and pepper.
Drizzle with olive oil.
Chill for at least 30 minutes.

3. Make the Meatballs:
In a bowl, mix ground chicken, breadcrumbs, onion, garlic, herbs, lemon zest and juice, egg, salt, and pepper.
Take about 1½ tbsp of the mix, flatten, and place a cube of feta in the center.
Wrap the meat around the cheese and roll into a ball. Repeat.

4. Cook the Meatballs:
Heat olive oil in a skillet over medium.
Cook meatballs in batches for 10–12 minutes, turning to brown all sides.
They’re done when they reach 165°F (75°C). Drain on paper towels.

5. Serve:
Plate the meatballs and serve with a side of tzatziki.
Top with extra dill and a drizzle of olive oil.
Goes great with pita, salad, or herby rice.

**Ingredients:
*Main Dish:
- 4 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- Salt and pepper to taste

*Honey Chili Glaze:
- 1/4 cup honey
- 2 tbsp soy sauce (low-sodium if preferred)
- 2 tbsp chili sauce (adjust to taste)
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- Juice of 1 lime

**Directions:
1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper or foil.
2. Prepare the glaze by whisking together honey, soy sauce, chili sauce, minced garlic, smoked paprika, chili powder, and lime juice.
3. Arrange the chicken and veggies on the sheet pan. Drizzle with olive oil, season with salt and pepper, and toss to coat.
4. Brush the chicken generously with the honey chili glaze.
5. Bake for 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F/75°C) and the veggies are tender.
6. Broil for 2-3 minutes for extra caramelization, if desired.
7. Serve hot, garnished with fresh herbs or lime wedges if desired.

INGREDIENTS:

1 pound ground chicken
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
2 garlic cloves, minced
1 egg
1/4 cup milk
1 tablespoon chopped fresh parsley
1 teaspoon dried oregano
1 teaspoon onion powder
Salt and pepper to taste
1/4 cup marinara sauce
1/4 cup shredded mozzarella cheese

INSTRUCTIONS:

STEP 1: PREHEAT THE OVEN
Set oven to 375°F. Lightly grease a muffin tin.

STEP 2: MIX THE MEATLOAF BASE
In a large bowl, combine ground chicken, grated Parmesan, and breadcrumbs. Add minced garlic, egg, and milk. Mix in parsley, oregano, onion powder, salt, and pepper. Stir gently until just combined—avoid overmixing.

STEP 3: SHAPE AND BAKE
Divide the mixture evenly into the muffin tin cups. Press lightly into shape without compacting too much.
Bake for 20–25 minutes, or until the tops are golden and cooked through.

STEP 4: ADD SAUCE AND CHEESE
Remove from oven, spoon a bit of marinara sauce over each mini meatloaf, and sprinkle with shredded mozzarella.

Hawaiian Banana Bread

Ingredients:

2 ripe bananas, mashed

1/2 cup crushed pineapple, drained

1/3 cup vegetable oil

2 large eggs

1/2 cup sugar

1/2 cup brown sugar

1 tsp vanilla extract

1 3/4 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1/2 cup shredded coconut (optional)

1/2 cup chopped macadamia nuts or walnuts (optional)

Preparation:

Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

In a large bowl, mix mashed bananas, pineapple, oil, eggs, sugars, and vanilla.

Stir in flour, baking soda, salt, and cinnamon until just combined.

Fold in coconut and nuts if using.

Pour into loaf pan and bake for 50–60 minutes, or until a toothpick comes out clean. Cool before slicing.
