🥔🧀 Cheesy Loaded Baked Potatoes 🧀🥔
🛒 Ingredients
6 medium potatoes
1 tbsp olive oil
Salt and black pepper to taste
For the Meat Sauce:
1 lb (450g) ground beef
1 small onion, finely diced
2 cloves garlic, minced
1 cup (240ml) tomato sauce
1 tbsp tomato paste
1 tsp paprika
1 tsp Italian seasoning
Salt and pepper to taste
Topping:
2 cups (200g) shredded mozzarella cheese
2 tbsp chopped fresh parsley
👩‍🍳 Instructions
1️⃣ Preheat oven to 400°F (200°C).
2️⃣ Wash the potatoes and rub them with olive oil, salt, and pepper.
3️⃣ Bake for 45–60 minutes until tender.
4️⃣ While the potatoes bake, cook the onion in a skillet until soft.
5️⃣ Add garlic and ground beef. Cook until browned.
6️⃣ Stir in tomato sauce, tomato paste, paprika, Italian seasoning, salt, and pepper.
7️⃣ Simmer for 10–15 minutes until thick.
8️⃣ Remove potatoes from the oven and gently crush each one with a fork or potato masher.
9️⃣ Transfer to a baking dish and top each potato with the meat sauce.
🔟 Sprinkle generously with mozzarella cheese.

1 ½ cups (190g) all-purpose flour
1 tsp baking powder
½ tsp salt
1 cup (200g) granulated sugar
3 large eggs
½ cup (120ml) vegetable oil
½ cup (120g) plain Greek yogurt or sour cream
Zest of 2 lemons
2 tbsp fresh lemon juice
1 tsp vanilla extract
For the Lemon Glaze:
1 cup (120g) powdered sugar
2–3 tbsp fresh lemon juice
Optional Garnish:
Extra lemon zest
👩‍🍳 Instructions
Preheat oven to 350°F (175°C).
Grease and line a 9x5-inch loaf pan with parchment paper.
In a bowl, whisk together flour, baking powder, and salt.
In another large bowl, whisk sugar and eggs until light and slightly fluffy.
Add oil, yogurt, lemon zest, lemon juice, and vanilla extract. Mix well.
Gradually fold the dry ingredients into the wet ingredients until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
🍋 Make the Glaze
Mix powdered sugar and lemon juice until smooth.
Once the loaf is completely cool, drizzle the glaze over the top.
