🍋🥧 Greek Custard Pie with Phyllo & Syrup – Flaky, Silky & Sweetly Soaked! ✨
This Galaktoboureko twist brings together velvety vanilla custard nestled between crispy, golden phyllo sheets and drenched in a warm citrus-scented syrup. Light yet indulgent, this traditional Greek dessert is perfect for special occasions or a sweet finish to a Mediterranean meal. 🍰🍯🧡
📋 Ingredients:
For the Creamy Custard:
• 4 cups whole milk
• ½ cup fine semolina flour
• ½ cup sugar
• 2 large eggs + 2 egg yolks
• 1 teaspoon vanilla extract
• Zest of 1 orange or lemon
• 2 tablespoons unsalted butter
For the Phyllo Layers:
• 12 phyllo sheets, thawed
• ½ cup melted unsalted butter (for brushing)
For the Syrup:
• 1 cup granulated sugar
• ½ cup water
• 2 tablespoons orange juice (or lemon)
• 1 strip of citrus peel
• ½ teaspoon cinnamon or a cinnamon stick (optional)
• 1 teaspoon honey (optional)
🥣 Directions:
1️⃣ Prepare Custard:
Heat milk in a saucepan over medium heat. Slowly whisk in semolina, sugar, and orange zest. Stir until thick and smooth (about 6–8 mins). In a separate bowl, beat eggs and yolks. Temper with a bit of the warm custard, then return to the pot and cook 1–2 minutes more. Remove from heat, stir in vanilla and butter. Let cool slightly.
2️⃣ Assemble Base:
Preheat oven to 350°F. Butter a 9x13” baking dish. Layer 6 phyllo sheets on the bottom, brushing each with butter and letting edges hang over the sides.
3️⃣ Add Filling & Top:
Pour the custard over the phyllo. Fold in overhanging edges, then layer 6 more sheets on top, buttering each. Tuck in edges neatly or trim as needed.
4️⃣ Score & Bake:
Use a sharp knife to score the top layer into squares or diamonds. Bake for 45–50 minutes or until the phyllo is crisp and golden.
5️⃣ Make Syrup:
While it bakes, simmer sugar, water, citrus juice, peel, and cinnamon for 8–10 minutes until slightly thickened. Stir in honey and remove from heat.
6️⃣ Syrup Soak:
Pour syrup evenly over the hot pie straight from the oven. Let it absorb completely and cool before slicing.
7️⃣ Serve:
Serve at room temperature or chilled. Garnish with extra zest or a dusting of powdered sugar for an elegant finish! 🍊🥧✨
