🍗🍅 One-Pan Tuscan Chicken 🍅🍗
A quick and delicious meal featuring chicken cooked with spinach, sun-dried tomatoes, and a creamy sauce, all in one pan for easy cleanup.
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons olive oil
For the Sauce:
2 tablespoons unsalted butter
3 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan cheese
½ cup sun-dried tomatoes, chopped (oil-packed, drained)
3 cups fresh spinach
1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)
Directions:
Prepare the Chicken:
Season the chicken breasts on both sides with Italian seasoning, garlic powder, paprika, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5–7 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside.
Make the Sauce:
In the same skillet, reduce the heat to medium and melt the butter. Add the minced garlic and sauté for 30 seconds until fragrant.
Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer.
Stir in the Parmesan cheese, letting it melt into the sauce. Add the sun-dried tomatoes and dried basil. Simmer for 2–3 minutes to thicken slightly.
Add Spinach and Combine:
Add the fresh spinach to the skillet and stir until wilted, about 1–2 minutes.
Return the cooked chicken breasts to the skillet, spooning the creamy sauce over the top. Simmer for 2–3 minutes to warm through.
Serve:
Serve the Tuscan chicken hot, paired with rice, pasta, or crusty bread to soak up the creamy sauce. Garnish with fresh basil or additional Parmesan, if desired.
