Cheesy ranch chicken:
1/2 cup Mayo (or a block of cream cheese)
3 cloves of garlic minced
1 cup cheese
1 packet of ranch flavoring
Mix it all in a bowl and slather onto your chicken breast and cook for 30 minutes at 400°
I served with mashed potatoes and asparagus

Cheesy Tater Tot Meatloaf Casserole
Ultimate Comfort Meatloaf Topped with Tater Tots and Cheese
Ingredients:
1 cup ketchup
1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
2 lbs lean ground beef
30 Ritz crackers, crushed
2 oz Lipton onion soup mix
2 large eggs
24 oz frozen tater tots
2 cups shredded mozzarella and cheddar cheese blend
1/4 cup real bacon bits
Directions:
Preheat and Prepare Sauce:
Preheat oven to 350°F. In a small mixing bowl, combine ketchup and Sweet Baby Ray’s barbecue sauce; stir well and set aside.
Prepare Meatloaf Mixture:
In a large mixing bowl, combine ground beef, crushed Ritz crackers, Lipton onion soup mix, eggs, and 1/2 cup of the ketchup and barbecue sauce mixture. Mix thoroughly with your hands.
Assemble in Baking Dish:
Press the meatloaf mixture into a greased 9 x 13-inch baking dish. Spread the remaining ketchup and barbecue sauce mixture over the meat.
Add Tater Tots and Cheese:
Arrange frozen tater tots in a single layer on top of the sauce. Sprinkle shredded cheese and bacon bits over the tater tots.
Bake:
Cover the dish with aluminum foil and bake for 35 minutes. Remove the foil and continue baking for another 40 minutes or until the ground beef is thoroughly cooked.
Rest and Serve:
Remove the casserole from the oven and let it rest for a few minutes before slicing. Serve hot.

Cream Cheese Cake

Ingredients:

For the Cake:

8 oz cream cheese, softened
1/2 cup vegetable oil
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
For the Glaze (optional):

1/4 cup powdered sugar
1-2 tablespoons milk or cream
Instructions:

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
Beat the Cream Cheese: In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and continue beating until fully combined.
Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be cautious not to overmix.

Just made my never failed yet peanut butter fudge!!! So easy!!!
Pour 2 cups of sugar in a pot along with a 1/2 a cup of milk. Bring to a boil, over med heat and let boil 2 1/2 minutes. Remove from heat, add 3/4 of a cup of peanut butter and 1 teaspoon of vanilla. Stir till smooth, pour into an 8x8 butter dish. Let cool and enjoy!!!

My mom used to make this Swedish Apple Cake for family gatherings, and it was always the first dessert to disappear!
Swedish Apple Cake 🍎🍎🍎
Ingredients
½ cup butter, room temp
1 ⅔ cup sugar
2 eggs
1 ½ teaspoons vanilla
1 ½ cups flour
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons cinnamon
½ teaspoon nutmeg
3 cups diced & peeled apples (~2 large apples, whichever is your favorite)
Optional: ¼ cup chopped pecans or walnuts
Caramel
1 ⅓ cup brown sugar
2 tablespoons half & half
4 tablespoons butter
Preparation
Preheat oven to 350 degrees F and thoroughly grease a 9-inch springform pan.
In a small bowl, sift together flour, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, beat butter and sugar until smooth, then add eggs one at a time, followed by the vanilla.
Slowly mix the dry ingredients into the wet until just combined, then fold in apples and nuts if using.
Transfer batter to the prepared pan and bake for 35-40 minutes as you prepare the caramel.
Caramel: when cake has been baking for 30 minutes, start the caramel. Add brown sugar, half & half, and butter to a small saucepan over medium-low heat. Stir often until the mixture is smooth and fully combined, no need to bring to a full boil.
Remove cake from oven and pour caramel over the top. Return cake to oven for additional 10-15 minutes or until caramel is cracking and cake is cooked through the center.
Allow cake to cool at least 15 minutes before slicing.

Strawberry Cheesecake Banana Pudding 🍓🍌🍰
Ingredients:
Pudding Base:
1 box instant vanilla pudding mix
2 cups cold milk
1 can sweetened condensed milk
8 oz cream cheese, softened
1 cup heavy whipping cream
1 tsp vanilla extract
Layers:
1 lb strawberries, sliced
3-4 bananas, sliced
1 box vanilla wafer cookies, crushed (or graham cracker crumbs)
Strawberry Cream Layer:
1 cup strawberry puree
1 cup whipped topping
Directions:
Prepare the Pudding Base:
In a large bowl, whisk together the vanilla pudding mix and cold milk until it thickens.
Add in the sweetened condensed milk and softened cream cheese, and beat until smooth.
In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form, then fold into the pudding mixture.
Make the Strawberry Cream Layer:
Mix the strawberry puree with whipped topping until well combined.
Assemble the Layers:
In a large pan or individual serving containers, layer the pudding mixture, followed by a layer of crushed vanilla wafers, banana slices, and strawberry slices.
Add a layer of the strawberry cream, then repeat layers as desired.
Top and Serve:
Garnish with extra strawberries, bananas, and crushed vanilla wafers on top.
Refrigerate for at least 2 hours to set, then serve chilled. Enjoy!

Broccoli Cheddar Soup

Recipe👇
5 tbsp unsalted butter
½ onion chopped
⅓ cups all purpose flour
2 cups chicken stock
1 celery stalk finely diced
2½ cup broccoli chopped into bite sized pieces
2 cups whole milk
2 cups shredded cheddar
salt and pepper to taste

Garnish:
shredded cheddar
Toasted sliced baguette

Place large pot over medium heat and melt butter. Add onion and sweat, about 5 minutes.

Whisk in flour and cook for about 2 minutes.

Stir in chicken stock and season generously with salt and pepper.

Stir in celery and broccoli and bring to a boil, then reduce heat to medium-low. Let simmer until vegetables are tender, about 15 minutes.

Stir in milk and continue to simmer until soup is thick enough to just coat the back of a wooden spoon, 2 to 3 minutes.

Remove pot from heat and stir in cheddar in small handfuls, waiting until cheese melts to add more cheese.

Season with salt and pepper and top with more cheddar. Serve.

Ingredients:

1 lb ground beef or thinly sliced steak (such as ribeye)
1 box (12 oz) jumbo pasta shells
1 onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 tablespoon olive oil
1 1/2 cups shredded mozzarella cheese
1 cup shredded provolone cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 jar (24 oz) marinara sauce
Fresh parsley for garnish (optional)
Instructions:

Preheat the oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

Cook the pasta shells: Bring a large pot of salted water to a boil. Cook the jumbo shells according to package instructions until al dente. Drain and set aside.

Cook the steak mixture: In a large skillet, heat the olive oil over medium heat. Add the ground beef or thinly sliced steak, onion, bell pepper, and garlic. Cook until the meat is browned and the vegetables are softened, about 7-8 minutes. Season with garlic powder, onion powder, salt, and pepper. Remove from heat and let it cool slightly.
