Sweet, fluffy, and bursting with flavor, these Apple Berry Crumble Muffins are perfect for breakfast or a cozy snack! 🍏🫐
Ingredients:
- 2 cups mixed berries (e.g., blueberries, raspberries, chopped apples)
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup rolled oats
- 1/2 teaspoon cinnamon
Directions:
1. Start by preheating your oven to 375°F (190°C). Line a muffin tin with those cute paper liners.
2. In a big bowl, whisk together the all-purpose flour, both sugars, baking powder, cinnamon, and salt. A whisk is your friend here—get those lumps out!
3. In a separate bowl, mix the melted butter, milk, eggs, and vanilla extract until everything is well combined.
4. Pour the wet mixture into the dry ingredients and gently stir until just combined. We want tenderness, so go easy on the mixing!
5. Carefully fold in your lovely mixed berries. This is where the magic happens!
6. For the crumble topping, mix together rolled oats, brown sugar, flour, and melted butter in a small bowl. Use your fingers to work it into a crumbly texture.
