🐝🍯 Almost too cute to eat… but way too delicious to resist! These adorable honey bee mini cheesecakes are creamy, sweet, and guaranteed to make everyone smile.

There’s something extra special about a dessert that looks as sweet as it tastes. With their tiny almond wings, chocolate stripes, and creamy cheesecake base, these little bees bring a touch of sunshine to the table. Perfect for spring parties, birthdays, or a cozy afternoon treat with the family. 💛🌼
Ingredients:
1 ½ cups crushed shortbread cookies
¼ cup melted butter
10 oz (300 g) cream cheese, softened
½ cup heavy whipping cream
½ cup powdered sugar
2 tbsp honey
1 tsp vanilla extract
2 tsp unflavored gelatin
2 tbsp water
8–10 dried apricot pieces for the bees
2 oz (50 g) dark chocolate, melted
Sliced almonds for the wings
Extra honey for drizzling
Steps:
Mix the crushed cookies with the melted butter. Press firmly into the bottoms of small silicone molds or mini cheesecake molds.
Sprinkle the gelatin over the water and let it bloom for 5 minutes, then gently warm until dissolved.
Beat the cream cheese with powdered sugar, honey, and vanilla until smooth.
Whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture. Mix in the dissolved gelatin.
Spoon the filling over the cookie bases and smooth the tops. Refrigerate for at least 4 hours, or overnight for the best texture.
Shape small pieces of dried apricot into bee bodies. Pipe thin stripes of melted dark chocolate across each one.
Insert two sliced almonds into each bee to create the wings.
Carefully unmold the cheesecakes, place a little bee on top of each one, and finish with a light drizzle of honey.
Tips:
For perfectly shaped mini cheesecakes, chill them overnight before unmolding. Keep refrigerated until serving. Add the bee decorations shortly before serving so the almond wings stay crisp.
