Sloppy Joe Potato Skillet
Ingredients:
- 1 lb ground beef
- 4 medium potatoes, peeled and diced
- 1/2 onion, chopped
- 1 bell pepper, chopped
- 1 can (15 oz) tomato sauce
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1/2 cup shredded cheddar cheese (optional)
- Fresh parsley, chopped (for garnish)
Directions:
1. Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook for 8-10 minutes, stirring occasionally, until they are crispy and golden brown. Remove them from the skillet and set aside.
2. In the same skillet, add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.
3. Add the chopped onion and bell pepper to the skillet and sauté for 3-4 minutes, until softened.
4. Stir in the tomato sauce, tomato paste, Worcestershire sauce, brown sugar, garlic powder, paprika, salt, and pepper. Let the mixture simmer for 5 minutes, allowing the flavors to meld together.
5. Return the cooked potatoes to the skillet and mix them with the Sloppy Joe mixture. Stir well to coat the potatoes evenly.
6. If using, sprinkle shredded cheddar cheese over the top and let it melt for 2-3 minutes.
7. Garnish with fresh parsley and serve immediately.
