Creamy Vegetable Soup
Smooth, rich, and wonderfully comforting — this creamy soup is warm, cozy, and perfect for any day you need a little comfort in a bowl.
What You’ll Need
2 tablespoons butter or olive oil
1 small onion, chopped
2 cloves garlic, minced
2 cups mixed vegetables (potatoes, carrots, cauliflower, or broccoli)
3 cups vegetable or chicken broth
1 cup heavy cream
Salt and black pepper, to taste
Fresh parsley or thyme, for garnish
How to Make It
1. Heat butter or oil in a pot over medium heat.
2. Sauté onion until soft, then add garlic and cook until fragrant.
3. Add vegetables and broth; bring to a boil.
4. Simmer 15–20 minutes until vegetables are tender.
5. Blend until smooth using an immersion blender or blender.
6. Return to low heat and stir in heavy cream.
7. Season with salt and pepper.
8. Garnish and serve hot.
