INGREDIENTS:
- 3 large ripe avocados
- 2 tablespoons fresh lime juice
- 1/2 teaspoon salt, or to taste
- 1 (15-ounce) can refried beans
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup mild or medium salsa
- 1 (2.25-ounce) can sliced black olives, drained
- 3 green onions, chopped
- 1/2 red bell pepper, finely diced (for ornaments and stars)
- 1/2 yellow bell pepper, finely diced (for ornaments)
- 1/2 green bell pepper, finely diced (for ornaments)
- 6 cherry tomatoes, sliced in half
- Tortilla chips, for serving
INSTRUCTIONS:
1. Prepare Vegetables: Finely dice the red, yellow, and green bell peppers. Set aside a small portion of finely diced red bell pepper. From the remaining red bell pepper, carefully cut out 6 small star shapes using a tiny cookie cutter or a sharp knife; these will be the tree toppers. Chop the green onions and slice the cherry tomatoes in half. Drain the sliced black olives thoroughly.
2. Prepare Guacamole: In a medium bowl, mash the ripe avocados until smooth and creamy. Stir in the fresh lime juice and salt. Taste and adjust seasoning as needed. Ensure the guacamole is smooth enough to be piped.
3. Prepare Piping Bag: Transfer the prepared guacamole into a piping bag fitted with a large star tip (like a 1M or similar) or a large round tip. If you don't have a piping bag, you can use a large resealable plastic bag and snip off one corner to create an opening for piping.
4. Layer the Dips: For each of the 6 individual clear serving glasses (approximately 8-10 ounce capacity), carefully layer the ingredients in the following order: First, spread about 1/4 cup of refried beans evenly at the bottom. Next, add about 2-3 tablespoons of shredded cheddar cheese over the beans. Then, spoon about 2-3 tablespoons of sour cream on top of the cheese layer. Add about 2-3 tablespoons of salsa over the sour cream. Finally, sprinkle a layer of the drained sliced black olives and chopped green onions on top of the salsa layer.
5. Pipe the Guacamole Trees: Take the piping bag filled with guacamole and pipe a conical "Christmas tree" shape on top of the olive and green onion layer in each glass. Start piping a wider base and gradually narrow the stream as you pipe upwards to form a distinct tree shape.
6. Decorate the Trees: Gently press the finely diced red, yellow, and green bell peppers onto the piped guacamole "trees" to serve as colorful ornaments. Place a sliced cherry tomato half at the base of the guacamole tree on each side for a festive touch. Carefully place a red bell pepper star on the very top of each guacamole tree.
7. Serve: Arrange the festive 7-layer dip cups on a platter with tortilla chips for dipping. Serve immediately to enjoy the freshest flavors and textures, or refrigerate for up to 1-2 hours until ready to serve.
