Sweet Potato Brownies

Ingredients:

1 cup cooked and mashed sweet potato (about 1 large or 2 medium sweet potatoes)
1/2 cup almond butter (or any nut/seed butter)
1/3 cup maple syrup (or honey)
1/4 cup cocoa powder
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
Optional add-ins: 1/4 cup chocolate chips, chopped nuts, or dried fruit

Instructions:

Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper.
Prepare the sweet potatoes: Pierce the sweet potatoes with a fork and bake at 400°F (200°C) for 45-60 minutes, or until soft. Alternatively, you can microwave them for 6-8 minutes, turning halfway through.
Mash the sweet potatoes: Once cooked and cooled, scoop out the flesh and mash it until smooth.

8 oz pasta (penne, fettuccine, or any pasta of choice)
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
3 cloves garlic, minced
2 cups broccoli florets
1 cup heavy cream
1/2 cup chicken broth
1 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
Optional: red pepper flakes for a little heat

Instructions:

Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Add the broccoli florets during the last 2 minutes of cooking. Drain and set aside.
Cook the chicken: While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper, and cook until they are golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Make the sauce: In the same skillet, add the minced garlic and cook for 1 minute. Stir in the heavy cream and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 3-4 minutes, until the sauce starts to thicken.
Add the cheese and seasoning: Stir in the Parmesan cheese and Italian seasoning, and season with additional salt and pepper to taste. If you want some heat, add a pinch of red pepper flakes.

Chocolate Chip Heaven Cupcakes

Ingredients:

For the Cupcakes:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup milk
3/4 cup mini chocolate chips (plus extra for sprinkling)
For the Frosting:
1/2 cup unsalted butter, softened
2 cups powdered sugar
2 tablespoons heavy cream or milk
1 teaspoon vanilla extract
Pinch of salt

Instructions:

Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
Make the cupcake batter:
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.

Ingredients:

1 pound ground beef (or ground turkey)
1 small onion, chopped
2 cloves garlic, minced
1 (1 oz) packet taco seasoning
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn, drained
1 (10 oz) can diced tomatoes with green chilies, undrained (such as Rotel)
1 cup salsa
8 small flour or corn tortillas, cut into strips
2 cups shredded Mexican blend cheese
Optional toppings: sour cream, chopped cilantro, sliced jalapeños, diced avocado, or chopped green onions

Instructions:

Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Cook the beef: In a large skillet over medium-high heat, cook the ground beef with the chopped onion until the beef is browned and the onion is soft. Drain any excess fat. Add the minced garlic and taco seasoning, cooking for another minute.
Add the vegetables: Stir in the black beans, corn, diced tomatoes with green chilies, and salsa. Cook for 2-3 minutes until everything is well combined and heated through.
Assemble the casserole:
Spread a thin layer of the meat mixture on the bottom of the prepared baking dish.
Layer half of the tortilla strips over the meat mixture.
Sprinkle with half of the shredded cheese.

Pico De Gallo

Ingredients:

4 ripe Roma tomatoes, diced
1/2 medium red onion, finely chopped
1-2 jalapeño peppers, seeded and finely chopped (use more or less for desired heat)
1/4 cup fresh cilantro, chopped
Juice of 1 lime (about 2 tablespoons)
Salt, to taste (about 1/2 teaspoon)
Optional: 1 clove garlic, minced

Instructions:

Combine the ingredients: In a medium bowl, mix the diced tomatoes, chopped onion, jalapeño, cilantro, and garlic (if using).
Add lime juice and salt: Squeeze the fresh lime juice over the mixture and sprinkle with salt. Stir to combine.
Taste and adjust: Adjust the seasoning with more salt or lime juice if needed. For a spicier pico de gallo, add more jalapeño or leave some of the seeds.
Let it sit: For the best flavor, let the pico de gallo sit for at least 15-20 minutes before serving to allow the flavors to meld.

1/3 cup vegetable oil
For the glaze (optional):
1 cup powdered sugar
2-3 tablespoons milk
1/2 teaspoon vanilla extract

Instructions:

Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper.
Mix the batter: In a large bowl, combine the strawberry cake mix, eggs, and vegetable oil. Stir until a thick batter forms.
Spread in the pan: Press the batter evenly into the prepared baking pan. It will be thick and sticky, so you may need to use a spatula or your hands (lightly greased).

⇒ 1/2 teaspoon black pepper, divided

⇒ 1 cup shredded cheddar cheese
⇒ 8 slices bacon, cooked until crispy and crumbled
⇒ 1/2 cup sour cream (optional)

Directions:

1. Cook Potatoes: Place potatoes in a large pot and cover with water. Add 1 teaspoon of salt to the water. Bring to a boil and cook until potatoes are tender, about 15-20 minutes.

⇒ Other desired pizza toppings
⇒ Egg Wash:
⇒ 1 large egg, beaten
⇒ Garnish:
⇒ Dried Italian seasoning or oregano
⇒ Olive oil (optional, for brushing)

Directions:

1. Preheat Oven: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Prepare Dough: Divide pizza dough into 4 equal portions.

⇒ 1/2 cup diced tomatoes

⇒ Shredded lettuce
⇒ Diced onions
⇒ Pickles
⇒ Burger sauce or ketchup

Directions:
