4 Homemade Soups

1️⃣ Chicken Noodle Soup

Ingredients:

* 2 tbsp olive oil
* 1 cup chopped onion
* 1 cup sliced carrots
* 1 cup sliced celery
* 2 cloves garlic (minced)
* 8 cups chicken broth
* 2 cups cooked shredded chicken
* 2 cups egg noodles
* 1/2 tsp dried thyme
* 1/2 tsp salt
* 1/4 tsp black pepper
* 2 tbsp fresh parsley (chopped)

Instructions:

1. Heat olive oil in a large pot over medium heat.
2. Add onion, carrots, and celery. Cook for about 5 minutes until softened.
3. Stir in the minced garlic and cook for 1 minute until fragrant.
4. Pour in the chicken broth and add thyme, salt, and pepper.
5. Bring the soup to a boil, then reduce heat and simmer for 10 minutes.
6. Add the egg noodles and cook for 8 to 10 minutes until tender.
7. Stir in the shredded chicken and fresh parsley. Heat through for 2 minutes and serve.

Ingredients:

* 4 slices bacon (chopped)
* 1 cup chopped onion
* 2 cups diced potatoes
* 1 cup chopped celery
* 2 cups clam juice
* 2 (6.5 oz) cans chopped clams
* 2 cups whole milk
* 1 cup heavy cream
* 3 tbsp butter
* 3 tbsp all-purpose flour
* 1/2 tsp dried thyme
* 1/2 tsp salt
* 1/4 tsp black pepper

Instructions:

1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, keeping the fat in the pot.
2. Add onion and celery to the bacon fat. Sauté for 5 minutes until soft.
3. Melt the butter in the pot, then whisk in the flour to create a paste. Cook for 1 minute.
4. Slowly pour in the clam juice and whisk to combine. Add the diced potatoes, thyme, salt, and pepper.
5. Bring to a simmer and cook for 15 minutes or until potatoes are tender.
6. Stir in the milk, heavy cream, and the chopped clams (with their liquid).
7. Simmer for 5 more minutes without boiling. Stir in the cooked bacon before serving.

Instructions:

3. Stir in the crushed tomatoes, vegetable broth, sugar, basil, salt, and pepper.

5. Use an immersion blender to puree the soup until smooth (or carefully transfer to a regular blender in batches).

New York Cheesecake

Ingredients:

* 1 ½ cups graham cracker crumbs
* 2 tbsp sugar
* 5 tbsp melted butter
* 24 oz cream cheese, softened
* 1 cup sugar
* 3 large eggs
* 1 cup sour cream
* 1 tsp vanilla extract
* 2 tbsp all-purpose flour

Instructions:

1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, 2 tbsp sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 8 minutes, then cool.
2. Beat softened cream cheese and 1 cup sugar in a large bowl until smooth. Mix in flour, sour cream, and vanilla.
3. Add eggs one at a time, mixing on low speed just until blended. Do not overmix.
4. Pour batter over the crust. Bake for 55-60 minutes until the center is almost set but still jiggly.
5. Turn off the oven, open the door slightly, and let the cheesecake cool inside for 1 hour. Chill in the refrigerator for at least 4 hours before serving.

Instructions:

1. Preheat oven to 400°F and line a 12-cup muffin tin with paper liners.
2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
