*Slow Cooker Creamy Pork Chops & Scalloped Potatoes* 🥔🍖
Super comforting and everything cooks together in one pot!
# # # *Ingredients - serves 4*
*For the potatoes:*
- 2.5 lbs / 1.2kg potatoes, thinly sliced
- 1 small onion, thinly sliced
- 1 can 10.5oz / 300ml cream of chicken soup
- 1/2 cup / 120ml milk
- 1 cup / 100g shredded cheddar cheese
- 1 tsp garlic powder
- Salt & pepper
*For the pork:*
- 4 bone-in or boneless pork chops, about 1 inch thick
- 1 tsp paprika
- 1 tsp garlic powder
- Salt & black pepper
- 1 tbsp olive oil
# # # *Instructions - Slow Cooker / Crockpot*
1. *Prep the potatoes*:
Spray the slow cooker with oil. Layer half the potato and onion slices on the bottom.
In a bowl, whisk together cream of chicken soup, milk, garlic powder, salt, pepper. Pour half over potatoes. Add cheese. Repeat layers.
2. *Season the pork*:
Pat pork chops dry. Rub with olive oil, paprika, garlic powder, salt & pepper.
3. *Sear for extra flavor* - optional but makes it like the photo:
Sear pork chops 2-3 min per side in a hot pan until golden. This gives that nice crust.
4. *Cook*:
Place seared pork chops on top of the potato layer.
Cover and cook on *LOW for 6-7 hours* or *HIGH for 3-4 hours* until potatoes are tender and pork is cooked through.
5. *Finish*:
Let it sit 10 min with the lid off so the sauce thickens a bit. Sprinkle more pepper on top.
# # # *Oven Version*
Bake covered at *350°F / 175°C for 1 hour 15 min*, then uncover and bake 15 min more to brown the pork.
# # # *Tips*
- Use russet or yukon gold potatoes - they hold up best
- Don't use pre-shredded cheese if you can help it, it melts creamier
- For halal version: swap pork for thick chicken thighs and use cream of mushroom soup
