🍪 1. Oats Cookies
Ingredients
• 1 cup rolled oats
• ¾ cup all-purpose flour
• ½ cup unsalted butter, softened
• ½ cup brown sugar, packed
• ¼ cup granulated sugar
• 1 egg
• ½ tsp baking soda
• ½ tsp vanilla extract (optional)
• Pinch of salt
Instructions
1. Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
2. In a bowl, cream together butter, brown sugar, and white sugar until light and fluffy.
3. Add the egg and beat well.
4. Mix in the flour, oats, baking soda, and salt. Stir until combined.
5. Scoop small portions onto the tray and flatten slightly.
6. Bake for 10–12 minutes or until golden brown.
7. Cool completely and enjoy.
🥥 2. Coconut Cookies
Ingredients
• 1 cup all-purpose flour
• 1 cup desiccated coconut
• ½ cup unsalted butter, softened
• ½ cup granulated sugar
• 1 egg
• 1 tsp vanilla extract
• ½ tsp baking powder
• Pinch of salt
Instructions
1. Preheat oven to 180°C (350°F).
2. Beat together butter and sugar until creamy.
3. Add egg + vanilla and mix well.
4. Add flour, coconut, baking powder, and salt. Combine to make a soft dough.
5. Roll into small balls and place on baking tray.
6. Bake for 12–15 minutes until the edges turn light golden.
7. Let cool before serving.
🌴 3. Dates Cookies
Ingredients
• 1 cup all-purpose flour
• ½ cup chopped dates
• ½ cup unsalted butter, softened
• ½ cup granulated sugar
• ¼ cup brown sugar
• 1 egg
• ½ tsp baking soda
• ½ tsp vanilla extract
• Pinch of salt
Instructions
1. Preheat oven to 180°C (350°F).
2. Cream butter, white sugar, and brown sugar until fluffy.
3. Add the egg and vanilla.
4. Mix in flour, baking soda, and salt.
5. Fold in the chopped dates.
6. Drop spoonfuls onto a baking tray.
7. Bake 10–12 minutes or until lightly golden.
8. Cool and enjoy the chewy center!
🌽 4. Cornflakes Cookies
Ingredients
• 1 cup all-purpose flour
• 1½ cups crushed cornflakes
• ½ cup unsalted butter, softened
• ½ cup granulated sugar
• 1 egg
• ½ tsp vanilla extract
• ½ tsp baking powder
• Pinch of salt
Instructions
1. Preheat oven to 180°C (350°F).
2. Beat butter and sugar until smooth.
3. Add egg and vanilla and mix well.
4. Add flour, baking powder, and salt. Combine into dough.
5. Mix in the crushed cornflakes.
6. Shape dough into balls and place on tray.
7. Bake for 10–12 minutes until golden and crisp.
8. Cool and store in an airtight jar.
