Five things and it feeds eight people. The ricotta stirred through the pasta rather than layered on top is what keeps every bite creamy instead of just the middle one.

Baked Ziti ❤️

5 ingredients · ready in 50 minutes · feeds 8

You'll Need
Ziti, 1 lb — $1.20
Ground beef, 1 lb — $5.50
Marinara sauce, 1 jar (24 oz) — $2.50
Ricotta, 15 oz — $3.50
Shredded mozzarella, 2 cups — $2.98

Steps
1. Heat the oven to 375°F. Boil the ziti 2 minutes short of the package time and drain it.
2. Brown the ground beef, drain, and stir in the marinara.
3. Mix the drained ziti with the ricotta and half the sauce.
4. Spread half of that into a 9x13, scatter half the mozzarella over, then the rest of the ziti and the rest of the sauce.
5. Cover with the remaining mozzarella and bake 30 minutes, until bubbling and browned on top.

Good To Know: Pull the pasta 2 minutes early. It finishes cooking in the oven, and if you boil it fully first it turns soft by the time the cheese browns.

About $15.70 for eight.

Shepherd's pie without peeling a single potato. The gravy and vegetables go underneath, tater tots go on top, and the oven turns them into the crispest topping you'll ever put on a casserole.

Shepherd's Pie Tater Tot Casserole ❤️

6 ingredients · ready in 55 minutes · feeds 8

You'll Need
Ground beef, 1 lb — $5.50
Yellow onion, 1 — $0.70
Frozen mixed vegetables, 1 bag — $1.50
Brown gravy, 1 can — $1.50
Shredded cheddar, 2 cups — $2.98
Frozen tater tots, 1 bag — $3.50

Steps
1. Heat the oven to 400°F. Brown the beef with the chopped onion and drain it.
2. Stir in the mixed vegetables and the gravy and bring it up to a simmer.
3. Spread it into a 9x13 dish.
4. Scatter half the cheese over, then cover the whole surface with tater tots in a single layer.
5. Bake 35 minutes, add the rest of the cheese, and bake 5 minutes more until the tots are crisp and golden.

Good To Know: One single layer of tots with none overlapping. Stack them and the ones underneath steam instead of crisping. The second half of the cheese goes on at the end so it melts without burning.

About $15.70 for eight.

Tater tots on top, or do you go with mashed potatoes?

Toast the rolls before anything goes in them. Sauce soaks straight through untoasted bread and you end up eating it with a fork, which is not the point of a sub.

Meatball Subs ❤️

5 ingredients · ready in 30 minutes · makes 6

You'll Need
Frozen meatballs, 1 bag (24 oz) — $7.00
Marinara sauce, 1 jar (24 oz) — $2.50
Sub rolls, 6 — $3.50
Shredded mozzarella, 2 cups — $2.98
Butter and garlic powder — $0.50

Steps
1. Simmer the meatballs in the marinara in a covered pot for 20 minutes, until heated all the way through.
2. Heat the oven to 400°F. Split the rolls, butter the cut sides and sprinkle them with garlic powder.
3. Toast them cut side up on a sheet pan for 4 minutes.
4. Spoon the meatballs and sauce into each roll and cover with the mozzarella.
5. Back into the oven for 5 minutes, until the cheese is melted and browning.

Good To Know: Don't split the rolls all the way through — leave a hinge along one side and everything stays where you put it.

About $16.50 for six.

Fifteen minutes and cheaper than the takeout version by a long way. The two things that matter are slicing the beef across the grain and getting the pan properly hot before anything goes in.

15-Minute Beef And Broccoli ❤️

6 ingredients · ready in 15 minutes · feeds 4

You'll Need
Sirloin or flank steak, 1 lb — $8.00
Broccoli florets, 4 cups — $2.00
Soy sauce, 1/3 cup — $0.50
Brown sugar, 2 tablespoons — $0.10
Cornstarch, 1 tablespoon — $0.15
Garlic, 3 cloves — $0.50

Steps
1. Slice the beef thin across the grain. Whisk the soy sauce, brown sugar, cornstarch, minced garlic and 1/2 cup water together.
2. Get a skillet very hot. Lay the beef in one layer and leave it 2 minutes without touching it, then toss for 1 minute and take it out.
3. Add the broccoli and 1/4 cup water, cover, and steam 3 minutes.
4. Pour in the sauce and stir about a minute, until it thickens and turns glossy.
5. Return the beef and toss everything to coat.

Good To Know: Across the grain, always. Sliced with the grain it stays chewy no matter how you cook it. Look at which way the lines run in the meat and cut at a right angle to them.

About $11.25 for four.
