The easiest one-pot dinner you’ll make all week

Juicy sweet & spicy sausage meatballs, tender potatoes, and marinara all simmered together in one pan. Minimal prep. Big flavor. Zero stress.

Ingredients:
• 1 lb sausage (sweet + spicy), removed from casing and rolled into small meatballs
• 3 potatoes, chopped small
• 1 onion, chopped
• 3 cloves garlic, minced
• 1 large bottle marinara sauce
• 1 tsp salt
• 1 tsp pepper
• 1 tsp garlic powder
• 1 tsp oregano
• 1 tbsp olive oil
• ¼ cup water

Instructions:
1. In a large pan with a lid, add potatoes, olive oil, salt, pepper, garlic powder, oregano, onion, and garlic. Mix well.
2. Add the sausage meatballs on top.
3. Pour in the marinara sauce and ¼ cup water.
4. Turn heat to medium-high and bring to a boil.
5. Reduce to a simmer, cover, and cook for 20 minutes.

That’s it. One pot. Done.

My favorite cookie to bake lately: almond horn cookies. Chewy, nutty, chocolate-dipped, and finished with flaky sea salt. They look bakery-level but are actually simple to make—and they’re naturally gluten-free.

Save this recipe.

Ingredients:

3 cups almond flour
3 egg whites
3/4 cup granulated sugar
1 1/2 tsp almond extract
1 tsp vanilla extract
1 tsp cinnamon
Pinch of salt
1–1 1/2 cups sliced almonds
4–6 oz dark chocolate
Flaky sea salt

Instructions:

Mix almond flour, sugar, cinnamon, and salt. Add egg whites, almond extract, and vanilla extract. Mix until a thick, sticky dough forms.

Let the dough rest for 10–15 minutes.

With slightly damp hands, roll about 2 tablespoons of dough into logs and shape into crescents.

Roll in sliced almonds and place on a parchment-lined baking sheet.

Bake at 325–350°F for 15–18 minutes until lightly golden. Cool completely.

Dip both ends in melted chocolate.

While the chocolate is still soft, sprinkle flaky sea salt on top.

Let set before serving.

Tips:

Do not overbake—this keeps the center soft and chewy.
If the dough is too sticky, chill it for 15 minutes.
Use damp hands for easier shaping.
Use good chocolate for the best flavor.
