Fluffy Pancake Mini Muffins Delight ✨
Bite-sized and golden, these pancake mini muffins are the perfect grab-and-go breakfast or snack. Freezer-friendly and endlessly customizable just add your favorite mix-ins like blueberries or chocolate chips!
Ingredients
Makes 24 mini muffins
1 ½ cups all-purpose flour
1 tablespoon baking powder
2 tablespoons sugar
½ teaspoon salt
1 ¼ cups milk (room temperature)
1 large egg (room temperature)
2 tablespoons melted butter (cooled)
Directions
Preheat oven to 400°F (200°C). Lightly grease a mini muffin pan with non-stick spray or butter.
In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.
In another bowl, combine the milk, egg, and cooled melted butter. Whisk until smooth.
Stir wet ingredients into the dry mixture just until combined. Batter should be slightly lumpy don’t overmix.
Use a small cookie scoop or spoon to fill each muffin cup about 2/3 full.
Bake for 8–12 minutes, or until the tops are lightly golden and a toothpick inserted comes out clean.
Cool in the pan for a few minutes, then transfer to a wire rack.
Serve warm, or freeze for later and reheat as needed.
