I’ve been making salsa for a long time and you’ll love this recipe. This picture is making around 100 quarts but I’ll try to break it down to a 30 quart batch start with 3 to 4 gallons of whole tomatoes and cut them all down. I leave the skin on any variety 12 to 14 cups of chopped onions, I use a white onion and also a sweet yellow onion. 50 to 60 peppers I use Hungarian waxes and jalapeños. I’ll run 3 pounds of garlic through my ninja chopper. That works nice for the peppers also. Eight bunches of chopped cilantro, 2 cups, apple cider vinegar, one cup white vinegar, and one cup of a dark vinegar. 3/4 cup canning salt Sixers seven fresh lemon squeezed out and six or seven fresh limes squeezed out. I have a 60 quart container so I’m able to put that all in there and bring to boil, turn heat back and simmer for 20 minutes. At this point, you’re gonna add 1 gallon of tomato paste with heat completely off. start filling your jars up with at least 1/2 inch headspace. finished jars with a 20 minute water bath. 🌶️🌶️🌶️😎 A couple of other things I should’ve added. Make sure you rinse your tomatoes and pepper well🍅🌶️Also after you have finished your 20 minute simmer, heat off tomato paste in. You really have to work it to blend all the tomato paste together. I use a pancake spatula. Also handling peppers can make your hands hot. I wear white inspector gloves and surgical rubber gloves over the top of that. It works awesome. 😎@
