**Creamy Crockpot Swedish Meatballs – Tender, Savory & Full**
Hello dear friends! Craving a comforting, delicious meal that's a breeze to make? Look no further than these Creamy Crockpot Swedish Meatballs! They're perfect for a cozy dinner, and the best part is, your slow cooker does all the hard work. No fuss, just pure flavor!

This recipe is designed to be gentle and flavorful, using simple ingredients you likely have on hand. Imagine tender, savory meatballs swimming in a rich, creamy sauce – absolute bliss! And guess what? No alcohol, no pork, just pure deliciousness that everyone can enjoy.

Let's get cooking! ️

**Yields:** About 6-8 servings

**Prep time:** 15 minutes

**Cook time:** 3-4 hours on High or 6-8 hours on Low

**Ingredients You'll Need:**

* 1 pound ground beef (lean is fine!)
* * 1/2 cup plain breadcrumbs
* * 1/4 cup finely chopped onion (or 1 tablespoon onion powder if you prefer!)
* * 1 large egg
* * 1 teaspoon salt
* * 1/2 teaspoon black pepper
* * 2 tablespoons butter or olive oil (for searing, optional but adds great flavor!)
* * 2 tablespoons all-purpose flour (or gluten-free flour blend)
* * 2 cups low-sodium beef broth
* * 1 cup half-and-half or milk (for extra creaminess!)
* * 1 tablespoon Worcestershire sauce (check label for gluten-free if needed)
* * 1 teaspoon Dijon mustard
* * Fresh parsley, chopped (for garnish, optional)

**Easy Peasy Steps:**

1. **Make the Meatballs:** In a medium bowl, gently mix together the ground beef, breadcrumbs, chopped onion (or onion powder), egg, salt, and pepper. Don't overmix! Roll the mixture into small meatballs, about 1 inch in diameter.
2. 2. **Sear (Optional but Recommended!):** In a large skillet over medium heat, melt the butter or heat the olive oil. Carefully brown the meatballs on all sides. This step adds wonderful flavor and helps them hold their shape! Don't worry about cooking them through.
3. 3. **Create the Creamy Sauce:** Once your meatballs are browned, remove them from the skillet and set aside. Add the flour to the same skillet and whisk for about 1 minute to cook it slightly. Gradually whisk in the beef broth until smooth. Then, stir in the half-and-half (or milk), Worcestershire sauce, and Dijon mustard. Bring the mixture to a gentle simmer, stirring constantly, until it begins to thicken.
4. 4. **Crockpot Magic!** Place the browned meatballs into your slow cooker. Pour the thickened sauce mixture over the meatballs, ensuring they are mostly submerged.
5. 5. **Cook Low and Slow:** Cover your crockpot and cook on High for 3-4 hours, or on Low for 6-8 hours, until the meatballs are cooked through and the sauce is wonderfully creamy and heated.
6. 6. **Serve and Enjoy!** Give the sauce a final stir. Serve these delightful meatballs over your favorite egg noodles, mashed potatoes, or even with a side of crusty bread. Garnish with fresh parsley if you like!

These meatballs are so tender and the sauce is just heavenly. It’s a hug in a bowl! I hope you enjoy making and sharing this recipe with your loved ones. Let me know how yours turns out! ❤️
