Mini Strawberry Pavlovas

Crisp shells, soft marshmallow centres, and fresh strawberry flavour.
A light Australian favourite made for sharing.

Ingredients:

4 large egg whites, at room temperature
1 cup (220 g) caster sugar
1 teaspoon cornflour
1 teaspoon white vinegar
1 teaspoon vanilla extract
1 cup (240 ml) thickened cream, cold
1 tablespoon icing sugar
1 teaspoon vanilla extract, extra
1½ cups (220 g) diced strawberries

Directions:

Preheat the oven to 120°C / 250°F. Line a large baking tray with baking paper.
Beat the egg whites until soft peaks form.
Add the caster sugar one tablespoon at a time, beating well after each addition. Continue until the meringue is thick, glossy and the sugar has dissolved.
Fold in the cornflour, vinegar and vanilla.
Spoon six mounds onto the tray and shape a shallow hollow in each centre.
Bake for 75 minutes. Turn off the oven and allow the pavlovas to cool completely inside with the door slightly open.
Whip the cream, icing sugar and extra vanilla to soft peaks.
Fill the cooled pavlovas with cream and top with diced strawberries. Makes 6.

Lemon Blueberry Filo Scroll Cake

Crisp on top, softly custardy underneath, and filled with berries.
Every slice has a little crunch and a lot of fresh flavour.

Ingredients:

10 sheets filo pastry
⅓ cup (75 g) unsalted butter, melted
3 large eggs
1 cup (240 ml) milk
½ cup (120 g) Greek yogurt
⅓ cup (65 g) caster sugar
2 tablespoons lemon juice
1 tablespoon finely grated lemon zest
1 teaspoon vanilla extract
1 cup (150 g) blueberries

Directions:

Preheat the oven to 180°C / 350°F. Grease an 8-inch round cake pan.
Brush one filo sheet lightly with butter. Gently pleat it lengthwise, then coil it into a loose rose.
Place it in the centre of the pan. Repeat with the remaining sheets, wrapping each pleated sheet around the centre coil.
Brush the surface with the remaining butter and bake for 15 minutes.
Whisk the eggs, milk, yogurt, sugar, lemon juice, zest and vanilla.
Carefully pour the custard mixture between the filo folds. Press the blueberries gently into the folds.
Return to the oven for 25–32 minutes, until the custard is set and the filo is crisp and golden.
Cool for at least 20 minutes before slicing. Makes 8 servings.

Ingredients:

3 cups (270 g) blanched almond flour, spooned and leveled
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon fine salt
½ cup pure maple syrup or honey
¼ cup extra-virgin olive oil or melted unsalted butter
2 tablespoons lemon juice
4 large eggs
1 cup fresh or frozen blueberries
¾ teaspoon ground cinnamon

Directions:

Preheat the oven to 325°F (165°C). Line a standard 12-cup muffin pan with paper liners.
In a large bowl, whisk the almond flour, baking powder, baking soda, and salt until evenly combined.
In a separate medium bowl, whisk the maple syrup, olive oil, and lemon juice together.
Add the eggs and whisk until the wet mixture is smooth and evenly colored.
Pour the wet ingredients into the almond flour mixture. Stir gently until combined and only a few small clumps remain.
In a small bowl, gently toss the blueberries with the cinnamon. Fold the coated blueberries into the batter without overmixing.

⅓ cup coconut oil, melted and slightly cooled
½ cup pure maple syrup
2 large eggs, at room temperature
1 cup packed mashed ripe banana, approximately 3 medium bananas
¼ cup milk of choice
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon, plus a little extra for topping
1¾ cups white whole-wheat flour or regular whole-wheat flour
⅓ cup old-fashioned rolled oats, plus approximately 1 tablespoon for topping
1 teaspoon turbinado or granulated sugar, for topping

Directions:

Preheat the oven to 325°F (165°C). Lightly grease a standard 12-cup muffin pan or line it with paper liners.
In a large mixing bowl, whisk the melted coconut oil and maple syrup together.
Add the eggs and whisk until well combined.
Mix in the mashed bananas and milk. Add the baking soda, vanilla, salt, and cinnamon, then whisk again.
Add the whole-wheat flour and ⅓ cup rolled oats. Stir gently with a large spoon just until no dry streaks remain. Avoid overmixing.

Rich, buttery, and deeply chocolatey with a moist brownie-like crumb.

Ingredients:

For the chocolate pound cake:

2 cups all-purpose flour
¾ cup unsweetened cocoa powder
¾ teaspoon salt
½ teaspoon baking powder
½ teaspoon instant espresso powder
1½ cups unsalted butter, softened
2½ cups granulated sugar
5 large eggs, at room temperature
1½ cups buttermilk, at room temperature
2 ounces sweet German-style baking chocolate, melted and cooled
1 tablespoon vanilla extract

For the coconut-pecan frosting:

1 can (5 ounces) evaporated milk
¾ cup granulated sugar
¼ cup unsalted butter
2 large egg yolks
1⅓ cups flaked coconut
½ cup chopped toasted pecans

Directions:

Preheat the oven to 325°F (165°C). Generously coat a 10-inch fluted tube pan with baking spray, making sure to cover every groove.
Whisk the flour, cocoa powder, salt, baking powder, and espresso powder together in a medium bowl.
In a large bowl, beat 1½ cups softened butter for 30 seconds. Gradually add 2½ cups sugar and beat for approximately 5 minutes, until very light and fluffy.
Add the eggs one at a time, beating well after each addition and scraping down the bowl as needed.
Add the dry mixture in three additions, alternating with the buttermilk. Begin and end with the dry ingredients, mixing briefly after each addition.
Add the cooled melted chocolate and vanilla. Mix just until the batter is smooth and evenly combined.
Spread the batter evenly in the prepared pan. Bake for 65–70 minutes, until a toothpick inserted into the thickest part comes out clean or with a few moist crumbs.
Cool the cake in the pan for 10 minutes. Carefully invert it onto a wire rack and allow it to cool completely for approximately 2 hours.
For the frosting, combine the evaporated milk, ¾ cup sugar, ¼ cup butter, and egg yolks in a small saucepan.
Cook over medium heat, stirring constantly, for approximately 5–8 minutes, until the mixture thickens and coats the back of a spoon.
Remove from the heat and stir in the flaked coconut and toasted pecans. Cover and let the frosting cool until thickened but still spoonable.
Spoon the coconut-pecan frosting over the completely cooled cake. Allow it to settle before cutting the cake into 16–20 slices.

For the brown sugar meringue:

2 large egg whites
1½ cups firmly packed light brown sugar
2 tablespoons water

For the apple cake:

½ cup unsalted butter, softened
1 cup firmly packed light brown sugar
2 large egg yolks
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground ginger
2 large firm apples, unpeeled, cored, and coarsely grated
2 cups all-purpose flour, spooned and leveled

Directions:

Position an oven rack in the center and preheat the oven to 350°F (175°C). Grease a 9×9-inch metal baking pan. For a glass or ceramic pan, use 325°F (165°C).
Prepare the meringue by adding the egg whites, 1½ cups brown sugar, and water to the top of a double boiler.
Place it over simmering water, ensuring the bowl does not touch the water. Beat with an electric mixer for about 5 minutes, until the sugar dissolves and stiff, glossy peaks form. The meringue should reach 160°F (70°C). Remove it from the heat and set aside.
In a large bowl, beat the softened butter, 1 cup brown sugar, and egg yolks until light and fluffy.
Fold in the baking soda, salt, cinnamon, ginger, and grated apples.
Add the flour and fold gently until no dry streaks remain. Avoid overmixing.
Spread the thick apple batter evenly in the prepared pan. Carefully spread the meringue over the batter, reaching the edges.
Bake for 45–50 minutes, until the meringue is crisp and lightly golden. The center of the cake beneath the meringue should reach approximately 190°F (90°C).
Let the cake cool in the pan for at least 20 minutes before cutting it into 9 squares. Some cracking in the baked meringue is normal.

Directions:

Preheat the oven to 375°F (190°C). Grease and lightly flour a 9×13-inch baking dish.
Sift 2½ cups flour, 1½ cups sugar, baking powder, and salt into a large mixing bowl.
Add the milk, vegetable oil, beaten eggs, and vanilla. Mix just until a smooth, semi-thick batter forms. Avoid overmixing.
In a separate bowl, gently toss the blueberries with 2 teaspoons flour. Fold them carefully into the batter.
Spread the batter evenly in the prepared baking dish.
Bake for 25–30 minutes, until the surface is lightly golden.
Brush the top with melted butter and sprinkle evenly with 2 tablespoons sugar.
Return the cake to the oven for another 5–10 minutes, until golden and glazed. A toothpick inserted near the center should come out clean or with a few moist crumbs.
Let the cake cool in the pan for at least 20 minutes before cutting it into 16 squares.
