🍗 Chicken and Rice Casserole with Mixed Vegetables

🧾 Ingredients (Serves 6)
2 cups cooked chicken, shredded or diced
1½ cups uncooked long-grain rice
3 cups chicken broth (low sodium recommended)
1 cup mixed vegetables (carrots, peas, corn – fresh or frozen)
1 small onion, finely chopped
2 cloves garlic, minced
1 cup cream of chicken soup (or mushroom)
½ cup milk
2 tablespoons butter, melted
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
½ teaspoon dried thyme or parsley
Optional:
½ cup shredded cheddar or mozzarella cheese
Fresh parsley for garnish
👩‍🍳 Instructions
Preheat oven to 180°C (350°F). Lightly grease a casserole dish.
In a large bowl, combine uncooked rice, chicken broth, cream of chicken soup, and milk. Mix well.
Add cooked chicken, mixed vegetables, onion, garlic, melted butter, and all seasonings. Stir until evenly combined.
Pour mixture into the prepared casserole dish and spread evenly.
Cover tightly with foil and bake for 50–60 minutes, until rice is tender and liquid absorbed.
(Optional) Remove foil, sprinkle cheese on top, and bake 10 more minutes until melted and lightly golden.

🧀🥓 Cheddar Bacon Ranch Chicken Melt Sandwich

Ingredients
2 boneless, skinless chicken breasts
Salt & black pepper, to taste
½ teaspoon garlic powder
½ teaspoon paprika
4 slices thick-cut bacon
4 slices sharp cheddar cheese
4 slices sandwich bread (sourdough or rustic white works best)
3–4 tablespoons ranch dressing
2 tablespoons butter, softened
Optional garnish: fresh thyme or parsley
Instructions
1. Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and place on paper towels. Set aside.
2. Prepare the Chicken
Season the chicken breasts with salt, pepper, garlic powder, and paprika.
In the same skillet (using a little bacon fat for flavor), cook the chicken over medium heat for 5–6 minutes per side until golden and fully cooked.
Remove from heat and slice into thick pieces.
3. Assemble the Sandwich
Butter one side of each bread slice.
On the unbuttered side, spread ranch dressing.
Layer cheddar cheese, sliced chicken, bacon, another slice of cheddar, then top with the second slice of bread (butter side out).

1 lb egg noodles
1 lb Swedish meatballs (pre-cooked)
1 cup sour cream
1 can (10.5 oz) cream of mushroom soup
1 cup beef broth
1 small onion, finely chopped
2 cloves garlic, minced
1 cup shredded mozzarella cheese
Salt & black pepper, to taste

Cook the noodles
Boil egg noodles in salted water until al dente. Drain and set aside.
Prepare the sauce
In a large bowl, mix sour cream, cream of mushroom soup, beef broth, chopped onion, garlic, salt, and pepper until smooth.
Assemble the casserole
Preheat oven to 375°F (190°C).
Spread cooked noodles evenly in a greased baking dish.
Pour the creamy sauce over the noodles and gently toss to coat.
Add meatballs
Arrange the Swedish meatballs evenly on top of the noodles.

2 tablespoons butter, melted
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika

Optional: ¼ cup grated Parmesan cheese for topping

Ingredients
For the Lasagna Rolls
12 lasagna noodles
2 cups cooked chicken breast, shredded or finely chopped
1½ cups ricotta cheese
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and black pepper, to taste
For the Alfredo Sauce
3 tablespoons butter
2 cloves garlic, minced
1½ cups heavy cream
1 cup grated Parmesan cheese
Salt and black pepper, to taste
For Topping
Extra mozzarella cheese
Chopped fresh parsley
Instructions
Cook the Noodles
Boil lasagna noodles in salted water until al dente. Drain and lay them flat on parchment paper.
Prepare the Filling
In a bowl, mix ricotta, mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Stir in the cooked chicken until well combined.
Make the Alfredo Sauce
Melt butter in a saucepan over medium heat. Add garlic and sauté for 30 seconds.
Pour in heavy cream and simmer gently for 3–4 minutes. Stir in Parmesan cheese until smooth. Season with salt and pepper.

Ingredients (Serves 4)
For the Chicken
4 boneless, skinless chicken breasts
4 slices quality ham
4 slices Swiss cheese
Salt and black pepper, to taste
1 teaspoon dried mixed herbs (or Italian seasoning)
For the Breading
½ cup all-purpose flour
2 large eggs
1 tablespoon milk
1 cup breadcrumbs (Panko preferred)
½ teaspoon paprika
½ teaspoon garlic powder
For Cooking
2–3 tablespoons olive oil or melted butter
Instructions
Prepare the Chicken
Preheat oven to 375°F (190°C).
Slice a deep pocket into each chicken breast (do not cut all the way through). Season inside and outside with salt, pepper, and dried herbs.
Stuff the Chicken
Place one slice of ham and one slice of Swiss cheese inside each chicken breast. Secure with toothpicks if needed.
Set Up Breading Station
Bowl 1: flour
Bowl 2: eggs whisked with milk
Bowl 3: breadcrumbs mixed with paprika and garlic powder
Bread the Chicken
Dredge each stuffed breast in flour, dip into egg mixture, then coat well with breadcrumbs.
Bake Until Crispy
Place chicken on a lightly greased baking dish. Drizzle or brush tops with olive oil or melted butter.
Bake for 30–35 minutes, until golden brown and cooked through (internal temp 165°F / 74°C).
