Tomorrow is delivery day. This time includes the new favorite in the lineup, the pineapple verde! We have been hard at work on the packaging and seasoning the last few days. Tonight is salsa night! I’m about 30% done with the actual salsa.

Breakfast inspiration using the verde pulled pork! A pulled pork omelette quesadilla!

Ingredients:
La Banderita carb counter tortilla
Eggland's Best Eggs Three cheese omelette
(My wife LaLa💙 https://www.tiktok.com/?_r=1&_t=ZP-99MwybCyMdL taught me you can’t beat the flavor, quality or convenience of these omelets)
verde pulled pork
Shredded cheddar jack cheese

Cooked on the griddle until the outside started to crisp
Eating mine this morning with some Ortega medium taco sauce.

Of course it pairs perfectly with a crispy Diet Coke and a purple Alani Nu!

Here’s the easiest pulled pork verde recipe you will ever need. This makes such delicious tender pulled pork. It’s versatile and can be used many ways… with rice, on tacos, add bbq and make a sandwich, on pizza, with pasta, in chili….

Season a pork butt with your favorite seasoning
Put in a crock pot and add a pint of salsa verde. (I used my pineapple verde and added a spicy for some extra flavor)
Set on low for 12-14 hours
Once it’s done, the pork will just fall apart with a fork.

I also strained the broth into a bowl, chilled it and the cleared the solidified fat off the top. I used the strained broth to make super flavorful rice for this meal.

This is a sign for you to get some pineapple verde salsa!
