As missmelliecooks, I’m always trying to make good healthy meals more accessible to those looking for their best health. Today was a little different…trying to make clean drinking water a reality for someone in the global community.

I had the honor of being the pacesetter in our the Nolensville Walk4water and thoroughly enjoyed the day. Thanks to everyone who walked or donated for this effort. We made many new friends in the community as well…great folks in Nolensville, TN!

When you find yourself faced with food you might not normally choose, go with the best possible option and let go of the guilt!
 
I’m not usually a pizza person (I don’t do well with gluten and sugar OR dairy), but a good friend was visiting and wanted to try out . I chose one of their vegan options with a GF crust and hopefully vegan cheese. If it was vegan, it was the best cheese I’ve had in a while!
 
The “Larry” sported roasted cauliflower, spinach, chili glaze, golden raisins, parsley pesto, and pine nuts and was delicious! My friend was happy, and I made it work and let go of the guilt!

How do you cook when you don’t have time? Fit it in to get it in!

I literally had only 3 minutes this morning. Not enough time to roast my sweet potatoes. But it was enough time to wash ‘em and cut the foil to wrap ‘em and set out the oil and small bowl I’m use to oil ‘em for roasting. They’re ready to go first thing tomorrow morning though I won’t eat one till later in the day.

Just do what you can a little bit at a time. You’ll be amazed what you can get done!

Why would I show you my dirty kitchen? To show you it happens to me, too!

If you’ve got a full time job and commute there’s not enough hours in the day…or there’s just enough hours to mess things up but not clean them up. It’s ok…do what you can when you can. Feeding yourself healthy food IS worth the mess because YOU are worth it!

Save this just to look back at on rough days and know you’re not alone!

Another easy way to meal prep…cook for the week in large time blocks!

Here’s what I did this weekend (left to right): Catalina chicken, baked Jambalaya, sweet Everything bagel tuna salad with spinach, sweet and spicy butternut squash, grilled taco chili chicken (we ate half of that Saturday night), and homemade bagels with sloppy joe meat. That’ll get us through a few days!

This is even more fun with a friend or your favorite music or audio book.

Think eating healthy means you never get dessert? Think again!
 
My husband loves tiramisu. So, when I saw that posted a tiramisu chia pudding recipe, I had to try it. I knew chia was healthy, but I DIDN’T know when you mix it into something semi-liquid, it swells up and ultimately gels…just like pudding. 😲
 
What a delightful surprise! And the lightly sweet taste (along with chocolate, coffee, and coconut flavors) hit the spot for my sweet tooth…my husband’s, too. He asked for the last serving!

Wanna ace cooking? Get the right tools!
 
I have several favorites and almost all work on more than one ingredient. Here’s an example that was actually a gift. It will grate cheese (don’t buy the shredded – too many additives), gingerroot, zucchini, even carrots or potatoes (if you don’t need a lot).
 
And so easy to clean! To grate, you move whatever you’re grating down. To clean, simply move your dishrag up! I rinse to remove any extra solids, then wash, rinse, and dry right after using so nothing sticks. I can’t get every little hole dry, so I also allow it to airdry even after drying with a dishtowel.
 
I just checked Amazon, and these aren’t very expensive either…$6-$15. Remember, mine was a gift, but I’m upgrading to one with a non-slip base. DM me GRATER and I’ll send you the link!

What’s the first step to healthier eating? Cooking with whole foods…it’s simpler than you think!

This yumminess is Cajun Butter Roasted Shrimp with a side of broiled asparagus. Most of the ingredients you can see in the pic, plus some oil, butter, and a homemade spice mix…that’s it. No chemicals, no additives, no dyes, no preservatives.

There was a time when we didn’t know some of those added things could hurt us…but now that we know more about them, I’d rather not take the chance.

Plus fresh food like this just tastes better…thanks for that recipe !
