Good morning ! - My keto version of
Scotch Eggs - I took it a step further and deviled the yoke !! I used my favorite kitchen gadget- the air fryer

1 pound uncooked pork sausage of choice
(Watch for sugar and no nitrates) divide into 6 portions
6 hard boiled eggs , peeled
1-2 raw eggs , beaten
1 cup coating choice I used crushed pork rinds

Flatten sausage, wrap around egg and form ball around egg, dip in raw egg and pork rinds

Air Fry at 400°F for 12-16 minutes, turn halfway through cooking. The thicker the sausage layer, the longer it takes to cook.

Let cool completely

Cut in half and devil the yoke
Put back in egg half o and sprinkle with paprika

Refrigerate until cold

Serve cold

You can also eat them hot and not devil them, they are excellent with a little ground mustard
