CARAMEL APPLE DUMP CAKE - 🍎😋😋🍰
Just a hand full of ingredients - dump them in the pan and it turns out AMAZING!!!
INGREDIENTS
2 cans (20 ounces each) apple pie filling
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1 1/2 cups Kraft caramels unwrapped and each cut in half
1 box dry yellow cake mix
1 cup 2 sticks butter, cut into ¼ inch thick pats
INSTRUCTIONS
Preheat the oven to 350°F. Grease a 13×9 casserole dish with non-stick cooking spray and set aside.
In a medium mixing bowl, mix together apple pie filling, cinnamon, and nutmeg. Pour the apple mixture into the prepared pan and smooth out evenly.
Arrange the caramels over top of the apple filling. Evenly sprinkle the dry cake mix over the caramels.
Place the pats of butter evenly over the top of the whole dessert.
Bake the dump cake at 350F for 45 minutes, or until the top is lightly browned and the edges are bubbling.
Cool slightly before serving.

First smoked pulled pork - Budget smoker tube setup. How'd I do?
Got into grilling and smoking a bit more seriously recently. I'm saving my pennies for a Recteq, but I figured in the meantime, some smoke would be better than no smoke, so I bought a smoke tube for my old beat up propane grill.

Made a basic dry rub with Smoked paprika, brown sugar, salt, black pepper, garlic powder, chili powder, onion powder, rubbed and left it in the fridge overnight.

Filled the smoke tube with Apple chips, and got the grill up to as close to 250f as I could. Luckily I have a Meater thermometer probe, so that part wasn't so difficult. I had to refill the smoke tube once about half way through the smoke.

Smoked for 5 hours, then added some apple juice, then wrapped and transferred it to the oven.

Cooked till 200f, rested and pulled. I made some finishing asuce with apple cider vinigar, brown sugar, a little bit of my homemade seasoning, plus a little extra red pepper powder.

This was my first smoked pulled pork, and I think it turned out great! Very definite smoke flavour, although not overpowering. To my taste it turned out just about right. I'm very pleased with how well it worked, considering the amount of large vent openings in the lid of the grill. I may experiment with closing those off for a future cook.

i smoked a rack of babybacks. i left half on the entire time at 225 for about 4.5 hours and the other half i tried a 2.5-1.5-.75 method, braising in butter, brown sugar, bourbon and apple juice.

i enjoyed them all. looking forward to making more.

First Attempt at Smoking Steak (Delmonico)
So I just got standard Weber for smoking, and I have only smoked a pork butt to-date (came out amazing), but I made an attempt at smoking/reverse searing a thick Delmonico.

These guys were smoked at 225 until internal reached 125 (about an hour), and then seared on a super hot cast iron and basted in a hot garlic butter. Pretty proud of myself for my second time smoking anything—I am officially addicted!

First time making pork belly burnt ends. 2kg of belly porked before trimming skin, 24 hour dry rub marinade, 5 hour smoke at 100-120c then 30 min at 180-200c untill 80c internal to finish. Tasted heavenly and family really enjoyedthem

Charcoal snake - non Weber - will it work?
I’ve only ever seen the charcoal snake method done on Weber kettles. This is a Kingsford charcoal grill, I have the charcoal grate dropped to the lowest position which has the charcoal sitting about 5-6” below the cooking surface

Will this work? It’s not really indirect

How long will this snake last at what temp?

I will be adding a few applewood chunks to the beginning of this snake

Trying to smoke a rack of spareribs for about 4-5 hours as well as smoking some thick cut pork chops for about 1.5-2hrs? And some sausages.

Brisket Cooking Time Issues
Hello everyone! Thanks in advance to anyone who replies.

I’m having a problem with brisket cooking times. I cook them at about 250°F until they reach an internal temperature between 165°F to 180°F, then wrap them in butcher paper. However, it can take well over 12 hours to reach this temp, and as a result, the brisket comes out tough and dry.

Got a free smoker last summer. Totally rusted and abandoned as useless. A year later and it’s better than ever.
