🌿 Elevate your dining with Roasted Cauliflower Steaks & vibrant Tabbouleh! 🍽️ Transform cauliflower into golden "steaks," topped with a zesty, fresh Tabbouleh burst. 🌈 A delightful, visually stunning veggie treat! ✨🌱 🌿🍽️

INGREDIENTS
Cauliflower Steaks
2 medium heads cauliflower
Olive oil for spritzing
½ tsp (2 mL) salt
¼ tsp (1 mL) black pepper
1 can (15.5 oz or 398 mL) reduced-sodium chickpeas, rinsed and drained (see cook's tip)
1 tsp (5 mL) olive oil
1 tsp (5 mL) Lemon Pepper Rub
4 oz (125 g) crumbled feta cheese
Cauliflower Tabbouleh
½ seedless cucumber
½ cup (125 mL) loosely packed fresh parsley leaves
¼ cup (50 mL) loosely packed fresh mint leaves
½ lemon
1 tbsp (15 mL) olive oil
½ tsp (5 mL) salt

DIRECTIONS
Preheat the oven to 425°F (220°C).

To make the cauliflower steaks, cut away the stems and remove the leaves. Cut each head of caulflower in half lengthwise, then cut a 1" (2.5-cm) steak from each half (see directions below). Save 8 medium florets to roast whole, and the remainder to grate.

Use the Kitchen Spritzer to spray each side of the steaks with oil, and season with salt and black pepper.

In a medium mixing bowl, combine the chickpeas, cauliflower florets, oil, and rub.

Place the cauliflower steaks and chickpea mixture on the Half Sheet Pan and bake for 15 minutes. Remove the sheet pan from the oven. Top each steak with crumbled feta and bake for an additional 10 minutes.

To make the Cauliflower Tabbouleh, grate the remaining cauliflower scraps and the cucumber in the Multi-Grater & Slicer fitted with the coarse grater disk. Add the grated vegetables to a large mixing bowl.

Use the Herb Mill to grate the parsley and mint into the bowl. Juice the lemon with the Citrus Press into the bowl. Add the oil and salt, and stir to combine. Serve the tabbouleh with the roasted steaks, florets, and chickpeas.

Cook's Tips:
Save the liquid from canned chickpeas! It’s called aquafaba, and you can use it to make a fantastic sauce for your steaks. Just add ¼ cup (50 mL) of the chickpea liquid to the Whipped Cream Maker, along with 1 tsp (5 mL) of Lemon Pepper Rub. Pump the handle for 30 seconds, or until the liquid becomes light and airy.

Transform your pizza night with our Pizza Monkey Bread! 🍕✨ Each bite is a burst of cheesy, saucy goodness, making it a fun and flavorful twist on the classic pizza. 🧀🍞🎉

INGREDIENTS
½ can biscuit dough (about half a 16.3 oz./680 g pkg)
2 tbsp (30 mL) butter
⅛ tsp (0.5 mL) garlic powder
12 pepperoni slices
½ cup (125 mL) grated mozzarella cheese
1½ cups (375 mL) pizza sauce

DIRECTIONS
Preheat the oven to 350°F (180°C). Cut or tear the biscuit dough into 30 equally sized pieces. Roll each piece to form a ball and place into a medium bowl.
Place the butter and garlic powder in a small bowl and microwave until the butter melts, about 30 seconds. (To keep the butter from “popping” and making a mess, use a low temperature setting and check the butter every 15 seconds.)
Pour the melted garlic butter over the dough balls and gently toss with your hands.
Place three dough balls into the bottom of each well of the Silicone Cupcake Pan. Tear each pepperoni piece in half and put 4 halves on top of each well. Sprinkle half the cheese evenly over the wells.
Place the remaining dough balls, 2 per well, on top and gently press down. Top with the remaining cheese. (The wells will not be full, but the dough will puff up as it bakes!)
Bake for 16–20 minutes, or until golden brown.
Cool for 5 minutes before removing the monkey bread from the pan. Serve with pizza sauce.

Indulge in the vibrant and savory symphony of flavors with our Pressure Cooker Ginger Sesame Beef—a quick and delightful twist to your weeknight dinner! 🥩🥢🌶️

INGREDIENTS
1 tbsp (15 mL) olive oil
1½ lbs. (700 g) beef chuck, cut into strips
2 garlic cloves, diced
⅓ cup (75 mL) soy sauce
⅓ cup (75 mL) water or beef broth
⅓ cup (75 mL) packed brown sugar
2 tsp (10 mL) fresh ginger, grated
1 tsp (5 mL) toasted sesame oil
1½ tbsp (22 mL) cornstarch
Optional: Green onions, sesame seeds, cooked rice, steamed broccoli

DIRECTIONS
Set the Deluxe Multi Cooker to SEAR on high for 30 minutes; press START. Heat the oil for 1–3 minutes, then brown half the beef for 7–10 minutes. Press CANCEL. Repeat with the remaining beef.
Whisk together the remaining ingredients in a bowl and pour the mixture over the beef. Set to CUSTOM for 10 minutes; press START. When the timer is up, press CANCEL. Let the pressure release naturally for 10 minutes, then press the steam-release button.
Serve with cooked rice and steamed broccoli, and garnish with green onions and sesame seeds, if you’d like.

🧀🥦 **Chicken and Broccoli Cheesy Dip** 🥦🧀

This cheesy dip has bite-size pieces of chicken and broccoli and is easily made in a pressure cooker. Beware, once you start eating it, it’s hard to stop.

INGREDIENTS
1 lb. (450 g) chicken tenderloins
8 oz. (250 g) cream cheese
⅓ cup (75 mL) vegetable stock
1 cup (250 mL) frozen broccoli
1 small red bell pepper, finely chopped
1 tbsp (15 mL) All-Purpose Dill Mix, plus more for serving
2 garlic cloves, pressed
½ tsp (2 mL) salt
Add-Ins
4 oz. (125 g) sharp cheddar (1 cup/250 mL grated)
½ cup (125 mL) low-fat Greek yogurt

DIRECTIONS
Add the dip ingredients, except the add-ins, to the Deluxe Multi Cooker. Cook on CUSTOM for 6 minutes.
Meanwhile, coarsely grate the cheese listed in the add-ins for the dip you’re making.
When the timer is up, manually release the pressure. Remove and shred the chicken, and return to the pot. Stir in the add-ins. Let the dip sit for a few minutes to thicken before serving. Place in a serving bowl and sprinkle with additional rub.

Cook's Tips:
Frozen chicken? No problem. The cooking time remains the same, it’ll just take longer for the Quick Cooker to come to pressure.

🌽 Dive into the fiesta of flavors with Mexican Street Corn Dip! 🎉🧀 Let your taste buds salsa to the sweet, savory, and spicy dance of corn, mayo, cheese, and chili. 🌶️🌽 An irresistible dip to elevate your snack game! 🥳🇲🇽 🌽🧀

INGREDIENTS
¼ cup (50 mL) mayonnaise
¼ cup (50 mL) 2% plain low-fat Greek yogurt
1 tbsp (15 mL) chili powder, divided
2 garlic cloves
3 oz (90 g) fresh Parmesan cheese
8 oz (250 g) pepper jack cheese
1 lime
4 ears of corn, husks removed
Canola oil for spraying corn
1 jalapeño pepper, stem removed (optional)
½ small red onion
2 tbsp (30 mL) fresh cilantro leaves
Tortilla chips or fresh vegetable slices

DIRECTIONS
Set up the Indoor Outdoor Portable Grill for electric or charcoal cooking (outdoor only). Heat the grill to medium-high heat.

Combine the mayonnaise, yogurt, ½ tbsp (7 mL) of the chili powder, and garlic pressed with the Garlic Press in a medium bowl.

Use the Multi-Grater & Slicer fitted with the fine grater disk to grate the Parmesan. Then grate the pepper jack cheese with the coarse grater disk. Add the grated cheeses to the bowl.

Zest the lime with the Microplane® Zester and add to the bowl. Juice the lime over the bowl with the Citrus Press and mix to combine.

Spray the corn with oil using the Kitchen Spritzer. Sprinkle the corn with the remaining chili powder.

Place the corn, jalapeño, and onion directly on the grill grate and cover the grill with the lid. Grill the vegetables for 8–10 minutes, rotating the food occasionally to evenly char.

Remove the vegetables from the grill. Place the jalapeño and onion in the Manual Food Processor and process until finely chopped

Remove the corn kernels from the cob with the Kernel Cutter (see Cook’s tip).

Add the vegetables to the Rockcrok® Everyday Pan and stir in the cheese mixture to evenly coat the vegetables. Cover the pan with aluminum foil and heat on the grill for 8–10 minutes, or until the mixture starts to bubble.

Carefully remove the pan from the grill and stir the mixture to combine. Use the Herb Mill to grate the cilantro over the dip. Keep the dip warm in the Rockcrok® Slow Cooker Stand. Serve with chips or vegetable slices.
