Two years ago she started a Saturday tradition with her sister. A drive to Olton. A spot in line before the doors opened. A plate of dinosaur beef ribs.

This is what Mondays look like at Rejino.

We are making sausage today. Two kinds, our original Rojino and the jalapeño cheddar.

First thing we do is poke holes in every link. That lets the moisture out and tightens up the skin, and it makes the cold smoke take a lot better. These get smoked tomorrow morning.

There is a ton of moisture in the mixture on purpose. A lot of water goes in to help it bind, plus powdered milk for the dairy. If you skip the process and cook it right off the bat, all that moisture stays trapped and the meat feels like loose hamburger inside the casing. The slow way is what gives it that snap.

Here is what goes in it. Seasonings, milk, pork, brisket, cheese, hot dogs, jalapeños. All mixed up in the tubs and stuffed straight into links.

And the casing is real natural pork casing. It comes from the pig, not synthetic, the way it is supposed to be.

The Rojino is our old school, log heart style sausage. It is what I grew up on and what I first learned to make. That one is personal.
