Vegan Impossible Chili 🌶️ (Hearty, Smoky, One-Pot Chili)

A rich, smoky vegan chili made with Impossible ground beef, beans, and tomatoes that tastes just like classic chili but completely plant-based. This one-pot recipe comes together quickly and is loaded with warm spices, deep chili flavor, and plenty of protein.

Ingredients
1 package Impossible ground beef
2 cans beans (any mix: kidney, black, pinto, etc.)
2 cans tomatoes or 1 mason jar crushed tomatoes
2 cups vegetable stock

Spices
2+ tbsp chili powder
2 tsp salt
2 tsp black pepper
1 tsp cumin
1 tsp coriander
2 tsp paprika
2 tsp oregano
1 tsp ground mustard
1 tsp smoked paprika
1 tsp chipotle chili powder

Serve hot with:
cilantro
vegan sour cream
avocado
cornbread

VEGAN TOFU TIKKA MASALA.

If you’ve ever tried to make Indian food at home and it just didn’t hit like the restaurant… this one’s for you.

This vegan tofu tikka masala has that rich, velvety, restaurant-style sauce, and is completely cruelty-free.

My secret? Double blending the sauce for that ultra-smooth texture.

Serve it over rice and you’re done.

INGREDIENTS

Tofu + Marinade

1 block extra-firm tofu
2 tbsp vegetable oil
2 tsp garam masala
1 tsp cumin
1 tsp coriander
1 tsp paprika
2 tbsp ginger garlic paste
1 tsp salt

Masala Gravy

1 red onion, diced
1 tbsp ginger garlic paste
2 tsp garam masala
1 tsp cumin
1 tsp coriander
1 tsp paprika
½ tsp turmeric
1 tsp salt
1 tsp black pepper
Pinch cayenne
2 cups crushed tomatoes (14–16 oz)
1 cup vegetable stock
1 cup coconut milk

Bake tofu at 400°F for ~30 minutes.
Blend sauce until ultra smooth.
Combine. Serve over rice.

This is one of my favorite easy vegan dinner recipes, especially when we’re craving Indian takeout at home.

Just kidding, it’s classic, cozy zucchini bread, and this is the recipe I get asked for every single time I share a loaf. If you’ve got extra zucchini sitting around, this is the recipe to make.

Dry ingredients
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon ground cinnamon

Wet ingredients
- 2¼ cups white sugar
- 1 cup vegetable oil
- 3 large eggs
- 3 teaspoons vanilla extract

Mix-ins
- 2 cups shredded zucchini (about 2 medium zucchini)
- 1 cup chopped walnuts

Vietnamese lemongrass grilled pork chops at home 🔥
Sweet, savory, smoky pork, bright pickled veggies, and that perfect nước mắm dipping sauce.
This is a classic Vietnamese comfort meal, and it’s surprisingly easy to make.

Save this so you can cook it later 👇

LEMONGRASS PORK CHOP MARINADE (4 lbs pork)
• 4 lbs bone-in pork chops
• 3 stalks lemongrass, finely minced
• 8 cloves garlic, minced
• 3 tbsp fish sauce
• 3 tbsp sugar
• 1 tbsp soy sauce
• 2 tbsp neutral oil
• 1 tsp black pepper

PICKLED CARROT & DAIKON (Đồ chua)
• 2 cups julienned carrot
• 2 cups julienned daikon
• 1 tsp salt
• 1 cup warm water
• ½ cup sugar
• ½ cup white vinegar

NƯỚC MẮM DIPPING SAUCE
• ¼ cup fish sauce
• ¼ cup warm water
• 2–3 tbsp sugar
• 1–2 tbsp lime juice or rice vinegar
• 1 clove garlic, minced
• 1 Thai chili, sliced

Grill the pork until caramelized and slightly charred, pile it up with the crunchy pickles, and spoon over that sweet-salty nước mắm.

Shrimp (12 oz)
Onion (1 large)
Bell Peppers (2)
Celery (4 stalks)
Garlic (4 cloves)
Tomatoes (1 jar, or 1 can store-bought)
Tomato Paste (2 tbsp)
Rice (2 cups)
Chicken stock (2 cups)
Salt, black pepper, paprika, garlic powder, onion powder, cumin, coriander, oregano, thyme, Cajun seasoning, cayenne pepper, ground mustard
