Rattlesnake Bites
These crispy, spicy, and cheesy jalapeño bites are a perfect appetizer or snack, packed with a flavorful kick.
Ingredients:
12 large jalapeño peppers
8 oz cream cheese, softened
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup cooked and crumbled bacon
2 green onions, finely chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs
Vegetable oil, for frying
Directions:
Prepare Jalapeños: Slice the jalapeños in half lengthwise and remove the seeds and membranes. For less heat, remove all seeds; for more heat, leave some seeds intact.
Make the Filling: In a medium bowl, mix together the cream cheese, cheddar cheese, Monterey Jack cheese, crumbled bacon, green onions, garlic powder, onion powder, salt, and pepper until well combined.
Fill the Jalapeños: Spoon the cheese mixture into each jalapeño half, pressing it in firmly.
Coat the Jalapeños:
Place the flour in one bowl.
Beat the eggs in a second bowl.
Place the breadcrumbs in a third bowl.
Dip each stuffed jalapeño first in the flour, then in the beaten eggs, and finally in the breadcrumbs, ensuring each is well-coated.
Heat the Oil: In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C). Ensure there is enough oil to fully submerge the jalapeños.
Fry the Jalapeños: Working in batches, carefully place the breaded jalapeños into the hot oil. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain.
Serve: Allow the Rattlesnake Bites to cool slightly before serving. Enjoy them as is or with a dipping sauce like ranch or a spicy aioli.
