Grilled Cheese knows no age! The simple comfort food we all loved as kids, can easily take a sophisticated turn with a few tweaks. It's going to sound crazy, but the blueberry and brie grilled cheese is to die for! Ooey-gooey-creamy of the cheese, with a tart blueberry pop. It's crazy good, and is like a cheese and fruit tray meets comfort food! This grilled cheese is loved by all ages.
Blueberry and Brie Grilled Cheese
1 cup fresh blueberries from Rorabecks
2 tsp water
1/2 tsp of sugar
4 slices crusty bread
Softened butter to spread on bread
4 oz. brie cheese, thinly sliced
Step 1: In a small saucepan, add the blueberries, water and sugar. Cook over medium heat until blueberries begin to pop and are juicy. You want only a few popped, not all of them. Remove from heat and set aside.
Step 2: Butter one side of each slice of bread, like a traditional grilled cheese.
Step 3: Evenly place slices of brie cheese on the un-buttered side of two slices of bread. You don't have to meticulously cover the whole slice of bread. Brie is very melt-y, so it will spread.
Step 4: On the two slices with brie, top with blueberries. Then add another layer of brie cheese. Top with remaining slice of buttered bread, butter side facing out.
Step 5: Heat a skillet over medium heat. Place sandwich, butter side down, in pan. Cook for 2-3 minutes on each side or until lightly toasted and cheese melts. Serve immediately. Enjoy!
